Controlled release of caffeine from tablets of spray-dried casein gels
Publication date: March 2019Source: Food Hydrocolloids, Volume 88Author(s): Songwen Tan, Amirali Ebrahimi, Timothy LangrishAbstractThe controlled release of caffeine from the casein gel tablets has been achieved over release periods lasting from a few minutes to over a few days. A novel casein gel has been acidified at pH of 1.0 as the insoluble controlled-release matrix and spray-dried with coffee for microencapsulation. The optimal inlet temperature of spray drying for the casein-coffee mixtures has been found to be 150 °C. The elastic casein-coffee tablets have been engineered without denaturing the components (as in...

Effect of the pre-treatment and the drying process on the phenolic composition of raisins produced with a seedless Brazilian grape cultivar
Publication date: Available online 3 August 2018Source: Food Research InternationalAuthor(s): Carolina Olivati, Yara Paula de Oliveira Nishiyama, Reginaldo Teodoro de Souza, Natália Soares Janzantti, Maria Aparecida Mauro, Eleni Gomes, Isidro Hermosín Gutiérrez, Roberto da Silva, Ellen Silva Lago VanzelaAbstractThe grape is an important fruit regarding economic and health benefit parameters, because of its large consumption around the world and their bioactive phenolic compounds. The drying process of BRS Morena grapes, whether pre-treated or not with olive oil for producing raisins, resulted in qualitative and quantita...

Impact of resveratrol on exercise performance: A review
ConclusionThese facts allow us to assume that resveratrol could be used regularly as a dietary supplement for athletes of many disciplines, especially endurance ones.RésuméIntroductionLe resvératrol (3, 5, 40-trihydroxystilbène), est un polyphénol, trouvé dans les raisins, les noix et le vin rouge. Les do...

Anti-Inflammatory, Antiapoptotic and Proproliferative Effects of Vitis vinifera Seed Ethanolic Extract in the Liver of Streptozotocin-Nicotinamide-Induced Type 2 Diabetes in Male Rats

Effect of Breast Cancer Treatment on the Stomatognathic System.
Abstract Breast cancer is the most common cancer affecting women in the world and provides functional changes in the human body. Evaluate women submitted to unilateral mastectomy, through electromyographic activity (mandibular rest, right and left laterality, protrusion, maximum voluntary contraction with and without Parafilm, habitual and non-habitual mastication) and thickness (rest and maximum voluntary contraction) of the right temporal muscle (RT), left temporal (LT), right masseter (RM) and left masseter (LM), also the molar bite force (right and left) and compare the data with healthy women. Materia...

Determination of Inorganic Arsenic in Grape Products Using HPLC-ICP-MS.
Abstract The inorganic arsenic (i-As) in grape products, in particular juice, wine and raisins, collected from the Japanese market was investigated. The concentrations of total As in nine grape concentrated juices ranged from 3 to 20 ng g-1, and more than 80% of the As was inorganic according to the results of speciation by HPLC-ICP-MS. Among them, four samples contained more than 10 ng g-1 of i-As, although 10 ng g-1 of i-As is the limit for apple juice recommended by the U.S. Food and Drug Administration. Moreover, more than 10 ng g-1 of i-As was found in some of the wine and raisin samples, with the tot...

Inactivation of mould spores in a model system and on raisins by low-energy electron beam
Publication date: October 2018 Source:Food Control, Volume 92 Author(s): Danai Etter, Annalena Rupp, Alexander Prange, David Drissner Low-energy electron beam was investigated as an intervention strategy for the reduction of spores of food-spoiling fungi. Inactivation kinetics of five strains from the genera Aspergillus, Byssochlamys, Eurotium and Penicillium were determined. A two-dimensional membrane was used as a model system to exclude matrix effects. Raisins were incorporated into the study as an example of a three-dimensional food surface structure that is regularly being affected by spoilage through moulds. Co...

Oxygen and diverse nutrients influence the water kefir fermentation process.
Abstract Eight water kefir fermentation series differing in the presence of oxygen, the nutrient concentration, and the nutrient source were studied during eight consecutive backslopping steps. The presence of oxygen allowed the proliferation of acetic acid bacteria, resulting in high concentrations of acetic acid, and decreased the relative abundance of Bifidobacterium aquikefiri. Low nutrient concentrations resulted in slow water kefir fermentation and high pH values, which allowed the growth of Comamonas testosteroni/thiooxydans. Further, low nutrient concentrations favored the growth of Lactobacillus h...

Changes of free-form volatile compounds in pre-treated raisins with different packaging materials during storage
This study showed that compounds came from unsaturated fatty acid oxidation, glycosidically-derived and grape-derived source were contributed to fruity, floral or herbaceous aromas, but Maillard reaction-derived VOCs imparted fatty and roasted aromas.
