Part II: LOVING, Bioethics and How Miscegenation became a ‘thing’
Photo Courtesy of Mill Valley Film FestivalLong Before Jeff Nichols, writer/director, chose to make the film LOVING (2016),  about a heroic couple of modest means striking a blow for the maintenance of humanity—by ending anti-miscegenation laws in the USA—The field of Eugenics had to be born and the term  ‘miscegenation’ coined. Miscegenation laws were present in many states  of the USA into the 1960s, in defiance of the 14th amendment to the United States Constitution and  the Declaration of Human Rights. Modern “bioethics” emerged from the documentation of the ...

Feeding Disorders and Food Insecurity: A 6-Step Action Plan
Feeding disorders affect 25 to 45 percent of typically developing children and up to 80 percent of children with special needs and/or chronic health issues. A “feeding disorder” diagnosis applies to a child who can’t consume a balanced diet of age-appropriate food or liquid to support steady growth and development. When speech-language pathologists and other health care professionals treat a child with a feeding disorder, they work toward improving the child’s ability to eat a variety of foods. Food insecurity, on the other hand, means a child experiences limited or uncertain availability of nutritionally adequat...

The Future of Food – The Food of the Future
Innovation and technology might lead us to more conscious food consumption. We might get to know better, what we eat, what and how we should eat, or how to stretch the boundaries of the food industry. Let’s take a closer look at the future of food. I do not have to stress how important part food and eating play in our lives. Food is at the bottom in Maslow’s hierarchy of our needs, it is essential for our survival. It shows perfectly the creativity of humankind: food exists in the richest variety of ingredients, forms, shapes, tastes and colors all over the universe from the Greenlandic kiviak (dozens of small bird...

Recipes for Successful Entertaining With MS: Start With Eggs!
After I posted about my cooking demonstrations at MS Life 2016, I received a number of requests for the recipes I’d shared at that event. So I thought I’d share those with you today. These recipes are easy, fast to prepare, and suitable for entertaining. I know that the act of having someone over for a meal can be daunting for many of us with multiple sclerosis (MS) when we think about expense, fatigue, and coordination issues. But not having others over, especially if we used to entertain at home, can contribute to our social isolation. The three recipes included here can be used for breakfast, brunch, lunch, or dinn...

September is Neonatal Intensive Care Awareness Month
Project Sweet Peas, the founders of Neonatal Intensive Care Awareness Month, joined with other organizations in 2014 to honor the families whose babies are cared for neonatal intensive care units and to recognize the professionals who provide care when life’s first moments are the hardest. In the US, 10% of babies experience care in neonatal intensive care units. That means you probably know at least one family. And, maybe you know one of the professionals, too. Let them know, OK? 5 Common Mistakes (and Solutions) When Dealing with Kids ’ Chronic Constipation
As a pediatric feeding specialist, my job includes helping kids become more adventurous eaters by working with registered dietitians, physicians and other team members to ensure a child learns to comfortably try new foods. One frequent issue in kids with feeding challenges is chronic constipation. Why? Because picky or selective eaters often food jag on fiberless “kid food” like chicken nuggets and mac-n-cheese. Kids—especially picky eaters—need to have regular, almost daily bowel movements in order to feel hungry and increase their desire to try a variety of foods. Steve Hodges, a pediatric urologist at Wake Fores...

Unity Farm Journal - Third Week of August 2016
I ’m on “vacation” this week, working remotely from the farm, so no Wednesday blog post, but here’s the Unity Farm update.I always tell my staff that management is balancing scope, time and resources.  To much scope and not enough makes resources very grouchy unless they are augmented. The same thing is true about managing a farm.  Unless you set a scope that is achievable with the resources you have, the time (defined as the seasons in the farming year), living things, including your own well being, will suffer. As we plan for 2017, something we ’re doing during my slack time this week, we’e set a...

Tahcheen-e Esfenaj (Baked Persian Rice Cake with Lamb, Spinach & Prunes)
I must apologize for the infrequency of my blog posts over the past year. My new position at the medical school has kept me much busier than I’d ever imagined. Now, a year later, things are finally settling in and I’m hoping to bring this blog thing back to life, if only because the act of writing truly grounds me. One of the better parts of my new position has been getting to know our Qatar-based medical school faculty and staff, who sent me the most amazing Persian cookbook – Saraban: A Chef’s Journey through Persia by Greg and Lucy Malouf. (Thank you Shahrad and team!) This is a cookbook tha...

Practical and Helpful Tips: Help
A How-to Guide in Freezing Food When it comes to food freezing, it holds a little value whether you are using an upright or chest freezer because the same principles of successful freezing have to be followed. If this sounds like interesting to you, then please read on. 1. First cool the foods. Before you place your food into the freezer, be sure that it has already been cooled. If you freeze a hot food, it can only enhance the temperature of your freezer. Chances are your other foods in the same freezer will start defrosting. 2. Remember not to re-freeze. It is not really secure to freeze a food that had already gone into...

Johnie ’s Story
This post first appeared in The Odyssey Online on June 14, 2016.  Children in foster care often remain voiceless so I decided we need to start listening. Trigger Warning: Child and/or sexual abuse. The following story is from the point of view of a fictional five-year-old boy named Johnie. His voice represents the voice of thousands of children in foster care and thousands of children with no agency as they are victims of child abuse, sexual abuse, and neglect. My teacher Ms. Jackson is so pretty. She wears dresses every day when she teaches us. I like learning about math and counting. I think I’m pretty good at count...
