What a state of mind...
Yesterday I awoke really early, feeling at long last semi-normal. YES! The flu was finally behind me--my body had mended and I could enjoy it sans pain and discomfort!  I was able to begin the day with my yoga routine, cycle a bit and looked forward to walking with my husband once he awoke. Helen’s Meal Du Friday – Soul Food at its Finest…
Helen is still having a terrible time with cellulitis in her leg.  She said she was in a lot of pain today. Dad told her just to stay home and rest, but she showed up, did the grocery shopping, and prepared a wonderful meal.  We had a fried chicken breast, creamed potatoes, green beans, black eyed peas, and cornbread.  Not pictured is two deviled eggs and a green salad with ranch dressing. glittermom writes... Are the peas & carrots canned or frozen? I imagine you get a lot of fresh veggies down there too... Andrew replies… glittermom… turnips, collards, turnip greens, and rutabagas are some of the various vegetables easily obtainable fresh right now.  The peas and carrots are canned. Mom called me a moment ago. She is kind of manic today. I could hear it in her voice. She couldn’t get her words out fast enough.  Helen is really sick with cellulitis in one of her legs.  She can hardly walk. There will be no Helen Friday today.  Bless her heart! I’ll Take Cornbread for $1000 Alex…
I don’t normally like Helen’s cornbread as it just seems too dry and crumbly to me. Today it was great and I ate both pieces which was a nice surprise.  All pictured here are a fried pork cutlet, turnip greens, creamed potatoes, and black eyed peas. Helen put enough creamed potatoes on my plate to feed an army. There is also a bowl of carrot salad residing in my fridge at the moment. Helen To Go!
Helen left me two big plates of food yesterday for the weekend.  I am going to the Piggly Wiggly in a minute to get some hamburger buns for the ground beef patties. I also need some ketchup. Helen Friday…
Mom and I are taking bets on how much longer dad will keep suggesting peas and carrots as a side dish for every meal. Southern New Year’s Traditions…
Every year, on New Year’s Day, Charlie's wife cooks a couple of pork tenderloins, corn bread, collard greens, and black eyed peas.  Janice’s cornbread is the best I have ever tasted.
