Fiber-full eating for better health and lower cholesterol
The American Heart Association and the FDA recommend that we all eat at least 25 grams of dietary fiber per day. But what is it, how do we know how much we’re eating, and where did that number come from, anyway? What are the types of fiber? Dietary fiber is a good carbohydrate, also known as roughage, found in plant foods (not supplements). There are two kinds, soluble or insoluble, and both are really good for us. Soluble fiber becomes a thick gel in our intestines, which slows digestion (which keeps blood sugars from spiking) and traps fats so they can’t all be absorbed (which lowers cholesterol levels). Chorizo, Pepper, and Avocado Skillet
Here’s a recipe from the Wheat Belly 10-Day Grain Detox menu plan that helps you navigate the tricky first 10 days of being wheat/grain-free. We no longer confine breakfast dishes to breakfast, but have them for lunch or dinner, too. Breakfast skillets are almost always exploding with potatoes, but we don’t want the blood sugar problems of the excessive starch. The Puss Moth was a big highlight, and of course the various Hawk-moths that have come along in recent weeks including: Lime, Poplar, Eyed, Elephant, Small Elephant, and Privet. But, there are some moths that seem so delicately marked as if dusted with charcoal and...

A day doesn’t pass that I don’t see some new “healthy” recipe for quinoa, or a dietitian or nutritionist gushing about the health benefits of this seed. Many make the claim that quinoa is high in protein and is gluten-free. Clearly, the gluten-free movement is fueling some of this excitement over  this seed. But how much truth are there in these claims? And just how healthy is quinoa as a replacement for grains? Let’s tackle these claims one by one: Quinoa is not a grain and is gluten-free This is absolutely true. While all grains, or seeds of grasses, are members of the family Poaceae, quino...

An excerpt from  Mirth is God’s Medicine: Coping with Cancer as a Physician.“As iron sharpens iron, so one person sharpens another.”– Proverbs 27:17 In the coming weeks, after the biopsy returns positive for cancer— and after the initial shock wears off— I am trying to plan ahead, and prepare myself mentally and […]Find jobs at  Careers by KevinMD.com.  Search thousands of physician, PA, NP, and CRNA jobs now.  Learn more.
