Vegetarian, vegan, or plant-based? Comparing how different labels influence consumer evaluations of plant-based foods
Appetite. 2024 Mar 9:107288. doi: 10.1016/j.appet.2024.107288. Online ahead of print.ABSTRACTMarket actors have a role to play in enabling sustainable food transitions. One challenge for these actors is how to promote plant-based foods in ways that appeal to a growing number of consumers. Here we test how different plant-based related labels affect consumer appraisals of a range of foods (cookies, sausages, cheese, chocolate, pasta). In two studies (pre-registered; NUSA = 1148, NGermany = 491), we examined the effects of a 'vegetarian', 'vegan', or 'plant-based' label (compared to no label) on five attributes (healthy, tas...

Molecules, Vol. 29, Pages 1102: Can a Fraction of Flour and Sugar Be Replaced with Fruit By-Product Extracts in a Gluten-Free and Vegan Cookie Recipe?
ecchi Bruno Zanoni Certain food by-products, including not-good-for-sale apples and pomegranate peels, are rich in bioactive molecules that can be collected and reused in food formulations. Their extracts, rich in pectin and antioxidant compounds, were obtained using hydrodynamic cavitation (HC), a green, efficient, and scalable extraction technique. The extracts were chemically and physically characterized and used in gluten-free and vegan cookie formulations to replace part of the flour and sugar to study whether they can mimic the role of these ingredients. The amount of flour + sugar removed and replaced with ext...

Appetite. 2024 Feb 17:107280. doi: 10.1016/j.appet.2024.107280. Online ahead of print.ABSTRACTThe Nutritious Eating with Soul study was a 24-month, randomized behavioral nutrition intervention among African American adults. This present study, which is a secondary analysis of the NEW Soul study, examined changes in dietary acceptability, restraint, disinhibition, and hunger. Participants (n = 159; 79% female, 74% with ≥ college degree, mean age 48.4 y) were randomized to either a soul food vegan (n = 77) or soul food omnivorous (n = 82) diet and participated in a two-year behavioral nutrition intervention. Questionnaires...

Development of a diet quality score and adherence to the Swiss dietary recommendations for vegans
CONCLUSION: The newly developed DQS-V provides a single score for estimating diet quality among vegan adults. Further validation studies examining the DQS-V in relation to an independent dietary assessment method and to biomarkers of nutritional intake and status are still needed before the general application of the DQS-V.PMID:38291526 | PMC:PMC10829326 | DOI:10.1186/s41043-024-00498-3 (Source: Journal of Health, Population, and Nutrition)

Similarities and differences between vegetarians and vegans in motives for meat-free and plant-based diets
Appetite. 2024 Jan 28;195:107232. doi: 10.1016/j.appet.2024.107232. Online ahead of print.ABSTRACTPlant-based diets are quickly gaining popularity for their benefits to animal welfare, the environment, and public health. Compared to meat-eaters, meat-abstainers such as vegetarians and vegans are especially motivated by animal rights and the environment. However, little is known about the motivational and psychological factors that distinguish vegetarians from vegans, and what prevents vegetarians to shift towards a fully plant-based diet. In a sample of vegans (n = 335) and vegetarians (n = 182), we investigated a) motives...

Adherence to different forms of plant ‐based diets and pregnancy outcomes in the Danish National Birth Cohort: A prospective observational study
ConclusionsThe women reporting that they adhered to vegan diets during pregnancy had offspring with lower mean birth weight and higher risk of preeclampsia compared with omnivorous mothers. Low protein intake might be one plausible explanation for the observed association with birth weight. (Source: Acta Obstetricia et Gynecologica Scandinavica)
