Living wills, greyhounds and goalposts
National Healthcare Decisions Day – April 16, 2015By John G. Carney, MEd, President and CEOCenter for Practical BioethicsFor years, I’ve been curious to know whether people fail to complete living wills and avoid naming a healthcare agent out of procrastination or a false sense of confidence that they have plenty of time to do it later. Reality is, if you don’t do it when you don’t have to, it’s not likely to go well when you do. Naming someone during a time of crisis to speak on your behalf can be downright cruel, especially when you’ve not shared much about the things that are really i...

Haitian Griot Served with Cuban Black Beans & Rice and Marinated Cucumber Salad
If I haven’t blogged much in the way of new recipes lately, it’s because not much of what we’ve been trying lately has been blog worthy. Oh, of course, it’s been edible. Maybe even tasty. But not worth sharing with the world. But this dinner? It’s worth shouting about. In fact, I’ll go on record and say it’s one of the best meals we’ve ever made.  And worth every minute of preparation, which is not a lot of time at the stove, but does include an overnight marinade and a couple of hours braising. So save it for a weekend dinner when you can give it the time it deserves to sa...

Stuffed Eggplant with Lamb & Pinenuts from Ottolenghi’s Jerusalem
I know the year’s barely begun,  but this dish from Yotam Ottolenghi’s Jerusalem is well on its way to being my most memorable meal of 2015. Maybe even the past decade. And this from a gal who says she doesn’t like eggplant. If you don’t own Jerusalem, you must. Every recipe in it is a gem. The day after I was given it from my dear friends Karen and Steven, (OMG thank you!), my book club was over for dinner.  They all gathered round and placed stickies on their favorite recipe in the book that I simply must make. The entire book is one giant sticky collection, but somehow this recipe escaped t...

A host of golden daffodils
Beside the lake, beneath the trees, fluttering and dancing in the breeze.  But not near the food in supermarkets.  According to this report in the Guardian, Public Health England have issued guidance that says daffodils should not be displayed in shops near the food as daffodil bulbs are easily mistaken for onions, and daffodil stems look like a "type of vegetable popular in China".  There seems to be no sign of this announcement on the Public Health England website, but however.  So, where is the evidence? The Guardian quotes the British Columbia Drug and Poison Information Centre, a reputable look...

The weight loss project – dietary choices
Yesterday I blogged about carbohydrates. As I have reflected and read about carbohydrates over the past 24 hours, I also thought about my food choices doing my weight loss project. Losing weight and maintaining ones new weight usually involves both increasing movement and modifying how one eats. Without having a plan, as I reflect, decreasing carbohydrates has dominated my modification. My maintenance diet is not “low carb” but rather “decreased carb”. Perhaps some specific choices will clarify my choices. I love the occasional hamburger. Over the past months I have chosen to eat hamburgers app...

The conversations in Wheat Belly Total Health show you how to take the reins and regain health as fully as possible, even if your health struggles include conditions such as diabetes, rheumatoid arthritis, ulcerative colitis, or failed...

Everyday Life: July 2014
We went down to Dunfermline to visit the in-laws and I spent the whole weekend sneezing and crying. Good ol’ Fife pollen. We got the royal tour of the allotment… It’s unrecognisable from the weedy wasteland we inherited back in 2011. It’s now crammed with tomatoes, strawberries, raspberries, gooseberries, blueberries, leeks, onions, carrots, pumpkins, broad beans, peas, rhubarb, courgettes and even wee apple trees. David and Mary have put so much hard work into it. Meanwhile back in Inverness there’s only one plant in our little rental back yard, but it’s a goodun. It heaved w...

The Eat-A-Thon 2014 Continues…
Well, mom and I managed to eat our hearts out at the Chinese restaurant last night.  Mom got the sweet and sour pork and I got the spicy General Tso’s chicken.  Our food was really delicious.  I could make a meal just out of the copious amounts of delicious fried rice they give you.  Mom had a lot of her main dish left and asked me if Maggie would eat it.  “We could always give her some and see,” I told my mother. We got a to-go box.  Mom ambled across my yard to come and see the Princess of Mauritania and Maratouse which thrilled my furry little daughter’s soul. Maggie then proceed...

Have some pizza!
I made a full-sized family pizza starting with the Wheat Free Market Wheat Belly Pizza Crust Mix. The people at Wheat Free Market made the mix according to my recipe for pizza crust. Despite being wheat-free and not using any of the junk carbohydrate ingredients typically used in gluten-free doughs (NO cornstarch, tapioca starch, potato starch, or rice flour), the recipe is designed to yield pizza dough sturdy enough to hold in your hands. And be tasty, of course! I made a single large family-sized pizza from one package, but one package can also yield two smaller pizzas. I followed package directions and added 2 eggs, 4 t...

Wheat Belly Holiday Recipes 1
At the start of their Wheat Belly journey, many people resign themselves to a life without gravy, biscuits, or pumpkin pie, having to make the best of holidays devoid of enjoyment and indulgence. Just eat your dry turkey meat and lettuce leaves! It’s not true. You can indeed have all your holiday dishes. But we are going to recreate them without wheat, without other grains, without use of gluten-free junk carbohydrates (no cornstarch, tapioca starch, potato starch, or rice flour), with little to no added sugars, and no other problem ingredients. Minus all the undesirable ingredients, in fact, pumpkin pie, biscuits, a...
