Foods That Fight…Illness, That Is
By Amy Campbell That time of the year is upon us: the "holidays." It's not even Thanksgiving yet, but the stores are already filled with Christmas decorations and gifts. Holiday music is playing on radio stations. Holidays are fun, but this season can come with side effects, including colds and flu, heartburn, upset stomach, headaches, muscle aches, and fatigue. Medicine is often needed to treat these maladies, but if you're looking for something a little more natural and gentle, think, instead, about food. Food is medicine, too, and what better way to remedy your maladies and nourish your body at the same time? Colds and ...

Meatless Monday Recipe: Crockpot Lentil and Vegetable Soup
There is nothing more exciting on a busy weeknight than coming home to a house filled with warm and welcoming smells and a ready cooked meal. This Meatless Monday I present you with one of my favorite, simple, and flavorful crockpot recipes: lentil and vegetable soup. This hearty protein and fiber packed recipe only requires about 10 minutes of active cooking time and will simmer to perfection without tying you to the kitchen. Feel free to add any vegetables you have laying around, don’t feel constrained by the listed ingredients. This recipe should make more than enough soup for 6 hungry eaters. Leftovers are even b...

Have some pizza!
I made a full-sized family pizza starting with the Wheat Free Market Wheat Belly Pizza Crust Mix. The people at Wheat Free Market made the mix according to my recipe for pizza crust. Despite being wheat-free and not using any of the junk carbohydrate ingredients typically used in gluten-free doughs (NO cornstarch, tapioca starch, potato starch, or rice flour), the recipe is designed to yield pizza dough sturdy enough to hold in your hands. And be tasty, of course! I made a single large family-sized pizza from one package, but one package can also yield two smaller pizzas. I followed package directions and added 2 eggs, 4 t...

Cheesy Sausage Balls- low carb and Primal
Sausage balls. They were a staple of holidays growing up. In my opinion, there is very little, in the way of comfort food, that can compete with those bad boys. A delicious combination of sausage (Jimmy Dean for me!), cheddar cheese and Bisquick. Heaven! But when you eliminate grains and go low carb, things like this quickly fall out of grace. On my last trip to Texas, I managed to smuggle 4 pounds of Jimmy Dean back to Norway with me and today sausage balls popped into my head. Coincidence? I think not. I started wondering if I could make them low carb, and since there are very few things us stalwart low carbers have...

Fall for Chili: Easy Chickpea, Bean & Turkey Chili with Veggies
I love when the cooler weather hits and its time for jeans, sweaters, and warm comfort food. Chili has to be the ultimate in comfort foods. I love that you can’t mess it up. Just about any combination of veggies, beans, and lean protein will work. You can season it from sweet with maple syrup and molasses to spicy with jalapeno and poblano peppers to smoky with chipotle in adobo. The one I’m giving you today takes advantage of canned beans, corn, and tomatoes along with fresh carrots, celery and onion. Meat lovers will get their “fix” from some ground lean turkey in the dish, but this would do fine ...

alimentary, my dear Watson
When Cal was little I freely admit that we rarely cooked and ordered out a lot due to a confluence of factors: residency, tiny apartment kitchen, ridiculous availability of cheap multi-ethnic restaurant delivery options being the primary ones. When Mack was a toddler I cooked a little bit more, but again, freely admit that I relied very heavily on the Trader Joe's ready-made-meal aisle for, well, 75% of our dinners, though supplemented with fresh fruit and vegetables to round out the microwaved, peel-back-the-plastic-wrap experience. Now, with Nina eating table food and me being somewhat more firmly entrenched in the trappi...

What a Shame About Me…
Actually, today has been a fantastic day.  No stupid phobias or weird ideations. I was just listening to Steely Dan when that song played. It prompted me to write. I’ve felt about as normal as your average Joe can feel mentally and physically. I felt liberated to a degree. “Let’s take your cane tonight,” I told my mother as we made our way to my parent’s garage. “We'll put your walker in the trunk in case you need it.” She has been walking with a walker for months now. What a cumbersome little contraption. Well, mom made it to El Rio Grande and back with no problems using her cane. “Even I didn’t kn...

Slow-Cooker General Tso’s Chicken
Chinese food has always been one of my favorites! While takeout is easy, it’s not always healthy. Recently, I’ve been on the hunt to create a healthy alternative to a family favorite general tso’s chicken dish. This image was reprinted with permission from http://mealmakeovermoms.com/ and http://healthyaperture.com I wanted to find a way to pack in all of the flavor of this meal, while reducing the excessive amount of fat sodium that oftentimes comes in the fried takeout version. I was also looking for a way to increase the vegetables and make the recipe just as easy as ordering takeout. Slow Cooker Me...

Kelp Noodles, Beer, Sin, and Goals
Yep, it's time for this months' goal support post! For those who are not regulars here, the post is mainly a chance for people to check in and leave comments about what challenges they might be tackling, or how things are going generally, as well as to offer support to others who are doing the same.  Comments and comment replies are thus highly encouraged. And, as is traditional, I will also cram a bunch of seemingly unrelated things together and force them into a theme involving goals.   In fact I probably should have used a catchier title, one like: "Surprising Motivational Secret You Won't Believe!"  ...

Basically, Stuff and Nonsense
By Jan Chait Last week, I said I would tell you this week what your doctor should be doing and how often, but it will have to wait another week. Instead of writing, I ended up spending a lot of time trying to get past a software glitch to finish up something that should have been in yesterday. I won't get into the details, but it took hours. Hey! I reached a goal! I was getting onto my scooter just fine from every place except the desk chair, but I finally cleared that hurdle one day last week. Normally, I get onto the scooter by putting one hand on the seat, the other on the tiller, and lifting myself up to the seat. Aft...

Don’t Give Up on your Picky Eater
Feeding a picky eater can be one of the most stressful things a parent has to do. It’s frustrating, worrisome, stressful, annoying, disappointing and downright exasperating at times. It can be really easy to just throw your hands in the air and give up trying to get your picky eater to eat new or healthy foods. After serving something three or four times and having your child refuse to even give it one nibble it might feel like you’ve given it your best shot and it’s time to move on. But did you know that it can take at least 10 exposures to a new food before it is accepted? That number grows for very picky eaters...

Do Jalapenos Make For an Awesome Pain-Relieving Cream? (and Other Reasons We Love Orange Is the New Black)
Are you guys into Orange Is The New Black, the new original series on Netflix that's getting serious hype, yet? Because you should be. And because I'm already obsessed. In fact, I feel like I would totally be a Piper Chapman if I went to jail. And obvi, as a beauty girl, I'm also obsessed with the fact that she's trying to get her "artisanal" line of soaps and creams off the ground -- and sold at Barney's New York, nonetheless. And the other day when I was chatting with a fellow Orange fan, the cream thing came up and my friend said "Oh! You would know! Is that jalapeno cream thing legit?" (I don't wanna say more and ...
