Coeliac disease (CD) is an autoimmune enteropathy that primarily affects the small intestine, causing mucosal inflammation and variable villous atrophy. It occurs in genetically predisposed subjects following the ingestion of gluten, a protein complex of cereals such as wheat, barley, rye, whose main fractions are prolamins (including gliadin) and gluten [1].
