Insulin is a carcinogen
The science is clear: Insulin is carcinogenic. People with insulin resistance, metabolic syndrome/pre-diabetes, and type 2 diabetes have high levels of blood insulin, typically many times higher than normal. People with these conditions are at increased risk for various cancers such as breast, colon, prostate, and pancreas (Gallagher 2015). Type 2 diabetics are also more likely to die of their cancer than non-diabetics. While the cause-effect connection is due to a number of factors (high blood sugar, inflammation, high circulating estrogen levels, increased insulin-like growth factors, etc.), much of the increased cancer ...

Chocolate For Adults Only
Chocolate for Adults Only! I call this Chocolate For Adults Only because it is certain to leave young, sugar-craving palates unsatisfied. But rest assured, it is appropriate for the most serious chocolate craving! This is a way to obtain the rich flavors and textures of cocoa, the health benefits (for example, blood pressure reduction and anti-oxidation) of cocoa flavonoids, while obtaining none of the sugars/carbohydrates . . . and certainly no wheat or grains! It is easy to make, requiring just a few ingredients, a few steps, and a few minutes. Set aside and save some for an indulgence, e.g., dip into natural peanut or a...

Omega-3 Fatty Acids Reverse Fructose Damage: Study Shows How
...Diseases such as attention-deficit/hyperactivity disorder, diabetes, cardiovascular disease and Alzheimer’s have been linked to a high amount of fructose, which is used as an inexpensive sweetener in many ready-to-eat foods. "DHA changes not just one or two genes; it seems to push the entire gene pattern back to normal, which is remarkable," Xia Yang, a senior author of the study and a UCLA assistant professor of integrative biology and physiology. "And we can see why it has such a powerful effect." Photo image Think Stock Read full article on HealthCentral about how Omega-3 fatty acids can reverse f...

Super-Duper High-Fat Wheat Belly Yogurt
We celebrate fat on the Wheat Belly lifestyle. With yogurt, it means we never eat the thin, insipid non-fat or low-fat stuff. We laugh at the anemic 2% yogurt that you can practically drink rather than eat–and they’re filled with sugar or high-fructose corn syrup, anyway. You could go for the full-fat (3-6%, though typically 4% milk fat). Or you could go for the Super-Duper High-Fat Wheat Belly Yogurt made with heavy cream that is about 33-36% fat–really fatty. Almost like melted cream cheese, thick and rich. Fat, including that in dairy, has been demonized. Ironically, it is clear that the fat is the bes...

What a CT Scan Can Tell You About Your Lungs
Over the last half century, technology has made possible the probing of the solar system and galaxy beyond. People can instantly correspond with anyone in the world. We can see —in real time—events and phenomena heretofore only reported by second and third hand accounts. Yet with all of the distance breached by modern devices, we are also able to know in detail the goings on inside our own bodies. With the advent of computed tomography (CT) imaging, known familiarly as “CAT scans,” doctors and their patients now get a bird’s eye view of internal organs. This scientific know-how goes beyond simple x-rays to reveal...

3 Topics in the Wheat Belly Forefront.
How important is bowel flora? The status of bowel flora can spell the difference between having an autoimmune condition and not having an autoimmune condition, being diabetic or not being diabetic, being emotionally happy or not being happy, and developing colon cancer or not developing colon cancer. The composition of bowel flora and their ability to metabolize prebiotic fibers/resistant starches to butyrate and other fatty acids play important roles in insulin responses, nourishing and maintaining intestinal health, and intestinal permeability.I like to think of bowel flora, the thousand or so species of microorganisms th...

Fat Blasters: Ketosis ’ best friend
After elimination of virtually all dietary carbohydrates/sugars, the key to achieving physiologic ketosis is to maintain high fat intake. Not increased protein intake that can, in fact, “turn off” ketosis, since liberal protein intake modestly increases blood insulin and sugar levels, thereby undoing the process that generates ketosis. The key is to increase fat intake and thereby feel satiated and turn off all desire for carbs while not provoking insulin release. If accelerated weight loss or breaking a weight loss plateau is among your goals, increased fat intake—counterintuitively—encourages mobi...

Pregnant? Another Reason To Avoid Fructose
Pregnant women whose diet is high in fructose could be setting their babies up forhigh blood pressure andobesity later in life. This finding comes from a study in mice by researchers at the University of Texas, Medical Branch, Galveston. Theyprovided pregnant mice a solution of either fructose or water as their only drink from their first day of pregnancy through delivery. All of the baby mice were given standard mouse meals and their health was evaluated when they were one year old. The researchers found that both the male and female mice whose mothers drank the fructose solution had higher peak glucose levels compared to...

Chocolate Orange Whoopies
Here’s a quick and easy recipe for Chocolate Orange Whoopies, a soft cookie-like dessert that combines the citrus-y flavors of orange with rich dark chocolate. I used the Wheat-Free Market Virtue Sweetener, the sweetener that, because it is fourfold sweeter than sugar, can be used sparingly and is less costly than other natural, non-sugar sweeteners like Lakanto or Truvia. I used a whoopie pan but, if you don’t have one, you can just form 3/4-inch thick, 2 1/2-inch rounds on parchment paper and you will obtain much the same end product. Makes 12 whoopies 3 cups Wheat-Free Market All-Purpose Baking Mix (or alm...

5 Safe Wheat Belly Sweeteners.
Those of you already familiar with the Wheat Belly lifestyle know that we can re-create cookies, muffins, cakes, and other goodies using safe sweeteners with little to no downside. There are so many sweeteners out there which should you choose? Here are my 5 safe sweeteners: STEVIA.  Stevia is the natural sweetener from the stevia plant. Look for pure liquid stevia, pure powdered stevia, or powdered stevia with inulin; avoid stevia with maltodextrin, since maltodextrin is a form of sugar. My favorite is pure powdered stevia; though pricey, it is so concentrated that a tiny amount goes a long way and a container will las...

The Muffin Test
Here are two blueberry muffins. On the left is a conventional muffin weighing 131 grams. Because I purchased it in a bakery, no nutritional analysis was provided, but I estimated from similar blueberry muffins in which analyses are provided. Total carbs 63 grams, 3.1 grams fiber; net carbs = 59.9 grams. On the right is a muffin I made from a Wheat Belly recipe using almond flour, coconut flour, coconut oil, eggs, and blueberries. (Yes, I browned it a few minutes too long.) I used the monkfruit/erythritol Wheat-Free Market Virtue sweetener, which yields no carbs for all practical purposes. Total carbs 121 grams, 70 grams fi...

Natural sweeteners: A quantity and cost comparison
Here’s an interesting comparison I did in my kitchen. In the Wheat Belly lifestyle, we occasionally desire non-wheat, non-grain snacks, desserts, and treats made without sugar or other unhealthy sweeteners. We therefore reach for natural non- or minimally nutritive sweeteners that allow us to have, for example, a cookie or slice of cheesecake without problems of tooth decay, high blood sugars, inflammation, or any of the other health problems accompanied by foods made with grains and sugar. This allows you to entertain friends, serve treats to kids and grandkids, and enjoy holidays without destroying health. But such...

Chocolate Walnut Ice Cream
Yes, ice cream can fit into your Wheat Belly lifestyle . . . but some adjustments will be necessary. I have yet to find a commercially produced ice cream or custard that I thought was truly healthy. Even the “no sugar added” ice cream brands are usually sweetened with sorbitol and maltitol that can still cause rises in blood sugar (as well as small LDL particles that lead to heart disease), not to mention gas and diarrhea–-not the best choice after a romantic dinner! Here’s a way to make your own thick, rich custard without sugar, sorbitol, maltitol, and without having to endure gas and diarrhea. If you have a dai...
