Grain-Free Strawberry Shortcake
Everyone loves Strawberry Shortcake! And, because this version is made without grains or added sugars, it is also healthy (provided you include dairy in your program). Be warned, however: Because there are no appetite-stimulating grains or added sugars, one Shortcake is impressively filling! The almond flour-based dough browns more readily than grain flour, thus the golden color of the final product. Makes 4 1 pound strawberries, stemmed and quartered 1/4 cup Virtue Sweetener (or other natural sweetener equivalent to 1 cup sugar), divided 3 cups almond flour 2 teaspoons baking soda 1/4 teaspoon sea salt 6 tablespoons butt...

Flourless Chocolate Cake (dairy-free)
There are many recipes for Flourless Chocolate Cake available, especially since the Wheat Belly message demonized the use of wheat flour and sugar. But here is a very low-carb version of Flourless Chocolate Cake that is also dairy-free. Flourless cakes are heavier than flour-based cakes, so even small servings are quite filling. The use of less chocolate and use of cocoa powder, however, make this a bit more cakey than other recipes that can yield a more brownie or fudge-like cake. Makes 8-10 servings 6 ounces 100% chocolate, broken into fragments 1/2 cup cococonut oil 5 large eggs, separated 3/8 cup Virtue Sweetener (or...

High-Fat Hot Chocolate
Karen posted this recipe for what she called “Bulletproof Hot Chocolate” but what I shall call “High-Fat Hot Chocolate” in order to not violate my friend, Dave Asprey’s, trademark for his Bulletproof label, though certainly not as catchy or clever. If you like the idea of coconut oil and butter blended into your coffee, or if you don’t like or can’t drink coffee, follow Karen’s suggestion for doing it with hot chocolate/cocoa. In addition to changing the name, I’ve made some minor tweaks over Karen’s original recipe, including specifying our preferred natural swee...

Peanut Butter Cup Cookies
Here’s a recipe from my new book, Undoctored: Why Health Care Has Failed You and How You Can Become Smarter Than Your Doctor. Undoctored carries on the Wheat Belly tradition of providing recipes that allow you to indulge without paying a health or weight price. I learned long ago that asking people simply to eat real, whole foods like meats and vegetables quickly backfired. Someone would be doing great, for example, until Thanksgiving rolled around, and they’d return 14 pounds heavier, inflamed, with disastrous labs (sky-high small LDL, increased insulin and blood sugars, etc.)–a metabolic mess–from...

Peach Yogurt Panna Cotta
Here’s another panna cotta recipe but using yogurt to provide some probiotic effect, as well as a rich taste and mouthfeel. Peaches are just coming into season right now, so it’s a great time to start including in recipes. Choose full-fat yogurt, organic whenever possible, that is unflavored and unsweetened. You could also make your own high-fat yogurt from the Wheat Belly recipe here. Despite containing peach with around 9 grams net carbs each, the carbs of the one peach are distributed into 4 servings, yielding a net carb content of 10 grams per serving, safely under our limit of 15 grams. Because there is no a...

Amaretto Panna Cotta
Here’s a recipe for Amaretto Panna Cotta that is reminiscent of the flavors of amaretto liqueur. Traditional panna cotta is nothing more than gelatinized cream with added flavors. In this Wheat Belly version, I replace cream with coconut milk, but this introduces a need to blend the mixture in order to keep the coconut oil in the coconut milk suspended. I also, of course, replace the sugar with the natural sweeteners of Virtue Sweetener, converting an indulgent dessert into a healthy dish. I used the Trader Joe’s canned coconut milk as it has no BPA and no emulsifying agents. This basic recipe is easily modif...

Apple Pie Spice Muffins
These muffins taste like a delicious slice of apple pie but have only 6.5 grams net carbs per serving since there are no wheat or other grain flours nor sugar, only benign healthy ingredients, including Virtue Sweetener. Makes 6 Muffins: 4 tablespoons butter, softened 2 tablespoons Virtue Sweetener (or other sweetener equivalent to 1/2 cup sugar) 2 eggs, separated 1 cup almond flour 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 2 teaspoons baking soda 1 medium apple, cored and finely chopped Topping: 1/2 cup almond flour 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1 tablespoon Virtue Sweetener (or other...

Chocolate Mousse
Here’s a simple, creamy smooth recipe for Chocolate Mousse. Because there is no added sugar in this recipe, the end result has none of the problems of a conventionally prepared mousse: ultra low-carb with 2 grams net carbs per serving, no sugar, and plenty of healthy fat. It provides the added benefits of cocoa flavonoids, such as reductions in blood pressure and cardiovascular risk, with none of the problems of milk chocolate and other junk forms of chocolate. As written, this version is dairy-free. Substitute heavy cream for coconut milk if you include dairy in your diet. You can also top the mousse with whipped c...

Sweet Revenge
We have learned in the last few months that nearly 5 decades of research on heath and nutrition were shaped and directed by the sugar industry. We now understand that fat was wrongly demonized for commercial gain and that sugar consumption–the real cause underlying the surge in type 2 diabetes, weight gain/obesity, heart disease, dementia, and some forms of cancer–was essentially allowed to balloon in the American diet. You can read about this on your own here: From the New York Times From the Journal of the American Medical Association It is part of our mission to make the natural sweeteners in Virtue Sweet...

National Poetry Month, Diabetes Edition.
Aside from the spacing/kerning that makes me twitchy, after who knows how long, I finally wrote a poem about diabetes I ' m mostly pleased about. It ' s freeverse. It ' s meant to be performed [if I like it, maybe I ' ll video?] aloud. I originally posted this to Facebook, but have since taken it down so I can share it more widely (and hopefully more copyrighted-ly) with you.to Anyone Who Has Ever Said "Needles!... "I just blink pleasantly as you finish,Because I know your monologue by heart:" Ohhh, I don ' t know if I could ever do that.Needles are the worst! I ' d be so afraid! Zero-For-Zero Sugar Reform: Offer Zero, Get Zero
Rep. Ted Yoho (R-FL) and 11 co-sponsors recently introduced House Concurrent Resolution 40. It expresses the perfectly laudable “sense of Congress that all direct and indirect subsidies that benefit the production or export of sugar by all major sugar producing and consuming countries should be eliminated.” Things go downhill from there. The resolution conveniently lists the trade-distorting sugar policies of Brazil, India, Thailand, the European Union, and Mexico, while neglecting to mention U.S. tariff-rate quotas (TRQs) and domestic price supports. The president is encouraged to “seek elimination of all direct and ...

More about Virtue Sweetener
Because I wanted a benign and healthy way for followers of the Wheat Belly lifestyle to recreate dishes such as chocolate chip cookies, cheesecake, and pies with none of the health problems of grains or sugars, I helped Wheat-Free Market develop its Virtue Sweetener  product. Yes, you could do without such sweeteners. But I learned long ago when I introduced Wheat Belly concepts to patients in my cardiology practice that having options while entertaining friends, during holidays, and pleasing kids was important for staying on course on this lifestyle. Before I understood how to use such natural sweeteners, patients would ...

Pee in the Pool: What You Should Know, What You Should Do
Scientists recently figured out a cool way to measure how much urine is in a public swimming pool. And the results are sure to turn some heads! Their sweet idea? They used the artificial sweetener acesulfame K (Ace K). The human body is unable to break down aspartame, which is why there are no calories. It’s excreted intact in our urine and stable in swimming pool water. Researchers closely followed two public pools and found nearly 8 gallons of urine in the smaller one and nearly 20 gallons of urine in the larger one. They also found high levels in the 31 other pools and hot tubs they checked. People are peeing prodigio...
