Happy Meatless Monday and happy St. Patrick’s Day! In honor of St. Patrick’s Day I wanted to share one of my favorite, festive, and deceptively healthy green smoothie recipes: Peppermint Patty Green Monster Smoothie. This kid-friendly smoothie is packed to the brim with deliciously minty and chocolatey flavor, with the added bonus of masking the spinach (you’re family will never know what hit them!). This smoothie recipe is perfect for breakfast or dessert and can be doubled, tripled, or quadrupled to accommodate the little leprechauns in your life. It’s National Nutrition Month and all month long we’re sharing fun and delicious ways to “enjoy the taste of eating right.” To me, it’s all about making practical food choices, and about blending taste and nutrition. When we’re trying to eat right, we want to focus on FLAVOR, because who wants to eat something that doesn’t taste good, right? I was on Let’s Talk Live this week sharing some of my favorite tips for snacks and breakfasts that are full of flavor and packed with nutrition. Hopefully it can help make eating right a little easier (and a little tastier!) for you and your family. ...

Building Unity Farm - The Ducks
As the weather begins to improve (we’ve even had an afternoon above freezing - wahoo!), the ducks are beginning to wander farther from their duck house.   This week, they discovered the rain cistern that collects runoff from our farmhouse roof. For hours, they’ll bathe, preen, and drink their fill of the circulating rainwater.  They’re very social and tend to travel in groups.  They’re calm and have learned to recognize us as helpful rather than threatening. We have 10 ducks at the moment -2 Chocolate Indian Runner ducks2 Fawn Indian Runner ducks2 Welsh Harlequin ducks2 Swedish Blue ducks2 Rouen ducksT...

Salmon Salad Recipe: Quick, Convenient, and Healthy
If you’re like me you love all kinds of salads. Not just greens (which are FAB) but also tuna salad, egg salad, chicken salad and the like.  That’s why I can’t believe it took me so long to add salmon salad to the mix! Make Ahead Meals Save Time and Energy I love meals you can make once and eat 3-4 times, especially for lunches which tend to be “all business” for me. I want it to be super easy and delicious, but during the week, I don’t have time! I know you don’t either. This recipe is my healthy take on salmon salad. I use hummus to add another interesting layer of flavor plus n...

Forget the Diet Plans: The No-Brainer Way to Eat Healthy AND Lose Weight
During my life I’ve had a love/hate view of “the meal plan” segment of diet books. I want to make it work, but often it just takes too much time and effort to follow the plan and so I don’t stick with it for more than a couple days. I’ve read many many books and articles on nutrition, food as medicine, and weight loss. In that time I’ve come up with a simple formula that I use to eat healthy and lose/maintain weight. What follows is a simple approach to eating that is both healthy and conducive to losing/maintaining your desired weight. The 5 Pillars of Healthy Eating Remembering...

Hors d'oeuvres Suitable for the Super Bowl
I've never been a big sports fan, in part, because the ticket prices to attend virtually any professional sporting event is beyond ridiculous.  I remember attending my first professional baseball game with my Dad at Fenway Park when I was a kid.  That event remains one of the most memorable events I spent with my father when I was growing up.  But the prices to attend games like that are now simply out-of-reach for many families, and a lot has to do with the salaries for players, although the leagues can afford that with the costly TV broadcasting rights deals they sign for the games.  Its little wonder...

Paleo breakfast bowl! Tex mex grits topped with egg, bacon and avocado!
I bet the word 'grits' in the title got a few of you fired up, but don't worry, it's not real grits! It's cauliflower rice that got too much love from the Vitamix and turned into tiny grains more like cornmeal than rice. The good thing about cauliflower is that it tends to absorb the flavors of what you're cooking it in. In this case it's TexMex richness in the form of ancho chili powder and cumin. I love a good burrito bowl and despite my skepticism, this one delivered in a big way. The fine cauliflower had a mouth feel like grits, making it easier to suspend reality for a bit. And the flavor? Out of this world! If you li...

More Reasons to Eat Christmas Brussels Sprouts - Fertility
Fertility Clinic BeaulieuNutritionists have long been aware of the potential of an optimum diet to improve fertility and help with healthy successful pregnancies. Statistics gathered by pre conceptual care charity Foresight show healthy childbirth success results that most IVF and fertility clinics can only dream of (up to 4 times more successful in some cases)A new study goes one step further to prove why. Sadly it's an animal study rather than a human study but it exposes the potential mechanisms that inadequate diets provoke. It also highlights how important it is that the potential fathers adopt a healthy optimised die...
