Communicating About Risk in a Food-Obsessed World—Reprised
Nutrition and health communicators have, in the past, struggled with messaging around dietary guidance, weight management, and obesity. In recent months, a plethora of food safety crises has focused the attention of communicators on how best to deal with messages under conditions of crisis and high risk. Numerous cases of Salmonella, cyclosporiasis, Listeria, a deadly form of Escherichia coli, and other pathogenic outbreaks have raised consumers’ concern about the safety of the food they consume as well as about the US food system itself. In this article, the authors revisit well-established rules for communicating about...

Introduction: Cannabis in Society Today
This introductory review discusses the history, chemistry, and metabolism of Cannabis sativa, commonly referred to as marijuana. Can Obesity and Health Coexist?
Obesity in individuals who appear to be metabolically healthy is a transient state during which clinically silent diseases such as hypertension and diabetes may be progressing. Psychological problems may also be developing, and social stigma may be present. Therefore, obesity should be treated as soon as it is identified. (Source: Nutrition Today)

Breakthrough in Global Consensus for the Diagnosis of Malnutrition in Adults in Clinical Settings
The Global Leadership Initiative on Malnutrition was convened by several of the major global clinical nutrition societies to build consensus on criteria for diagnosis of malnutrition (ie, undernutrition) for adults in clinical settings. The malnutrition criteria for consideration were identified from existing widely used approaches. They were then ranked by ballot among the Global Leadership Initiative on Malnutrition participants. There was strong endorsement of 3 phenotypic criteria (weight loss, low body mass index, and reduced muscle mass) and 2 etiologic criteria (reduced food intake or assimilation, and inflammation ...

The Sodium Conundrum: Evolving Recommendations and Implications
The potential contribution of sodium to chronic disease risk has been an area of exploration for many years. Currently, a National Academies of Sciences, Engineering, and Medicine committee is working to update the 2005 Dietary Reference Intakes for sodium and potassium, evaluating the latest evidence with a look to excesses, inadequacies, and chronic disease risk reduction. Two recent reports will support the National Academies of Sciences, Engineering, and Medicine review: a systematic review of the science related to sodium, potassium, and chronic disease and guidelines for considering chronic disease in setting dietary...

Micronutrients and Bioactive Compounds in Mushrooms: A Recipe for Healthy Aging?
Mushrooms have been used both as food and as medicine in many cultures, and their popularity as both is growing in the United States. We have shown that they are inherently, or can easily be made to be, excellent dietary sources of 4 important bioactive compounds that are all known to decease in humans as they age. These are the micronutrients selenium and vitamin D2 and antioxidants glutathione and ergothioneine (Ergo). All of these except for Ergo can be found in significant amounts in other foods; hence, it will be the primary focus of this review. Because Ergo is made in nature primarily by nonyeast fungi, mushrooms ar...

Mycoprotein: Nutritional and Health Properties
Mycoprotein is derived from the filamentous fungus Fusarium venenatum, first discovered in the 1960s. Mycoprotein is high in protein and fiber and low in energy and saturated fat and contains no trans-fat or cholesterol. A systematic search of the PubMed identified 13 human studies investigating the health properties of mycoprotein, with some evidence of sustained satiety, improved metabolic profiling, and muscular protein synthetic response that warrants ongoing investigation. Mycoprotein is produced commercially, with low environmental impact, and is used as an ingredient in products marketed under the Quorn trademark. (...
