When running a farm you sometimes feel like MacGyver - given a few 2x4s, a piece of hardware cloth, and a box of bags, create a compost bagging machine. Every year, we produce about 10,000 pounds of organic compost from alpaca manure (a 16:1 carbon to nitrogen ratio) and timothy hay (a 45:1 carbon to nitrogen ratio), resulting in a perfect blend of Unity Farm “Llama beans” which has a 25:1 carbon to nitrogen ratio.   Alpaca compost has been described as “gardener’s gold” because of its perfect balance of nutrients.    One cubic foot weighs 33 pounds, so we can produce 300 bags for sale each year. &...

The Muffin Test
Here are two blueberry muffins. On the left is a conventional muffin weighing 131 grams. Because I purchased it in a bakery, no nutritional analysis was provided, but I estimated from similar blueberry muffins in which analyses are provided. Total carbs 63 grams, 3.1 grams fiber; net carbs = 59.9 grams. On the right is a muffin I made from a Wheat Belly recipe using almond flour, coconut flour, coconut oil, eggs, and blueberries. I was guessing 1700 / uL, with a little false bravado, actually just hoping they would be over 1000, so I was shocked to see the smiling nurse with the printout showing 3700, nine times as many as yesterday ' s count of 400. Yesterday the doctor and nurses were concerned about neutropenia, asking me how I felt. Based on prior experience, however, I believed that the neutrophils were there all along, just not measurable for some reason. After a good night ' s sleep they have to be teased out of hiding, or out of some other phase, or whatever neutrophils do.
