Recipes for Successful Entertaining With MS: Start With Eggs!
After I posted about my cooking demonstrations at MS Life 2016, I received a number of requests for the recipes I’d shared at that event. So I thought I’d share those with you today. These recipes are easy, fast to prepare, and suitable for entertaining. I know that the act of having someone over for a meal can be daunting for many of us with multiple sclerosis (MS) when we think about expense, fatigue, and coordination issues. But not having others over, especially if we used to entertain at home, can contribute to our social isolation. The three recipes included here can be used for breakfast, brunch, lunch, or dinn...

Foraged Delight – The Staghorn Sumac
This is staghorn sumac (rhus thphina), whose gorgeous red fruit berries I first encountered last summer atop High Knob in the Loyalsock. Isn’t it gorgeous? The branches and berries of the staghorn sumac have a fuzzy feeling like the antlers of a deer (hence the name) and will NOT give you a rash. The stuff that gives you a rash is poison sumac. Poison sumac has a red trunk. It grows in swamps and standing water, it’s berries are white and hang down, and the leaves look like this. Got it? Good. Now stop being afraid and go get yourself some staghorn sumac. What to do with Staghorn Sumac Berries The sumac f...

Tahcheen-e Esfenaj (Baked Persian Rice Cake with Lamb, Spinach & Prunes)
I must apologize for the infrequency of my blog posts over the past year. My new position at the medical school has kept me much busier than I’d ever imagined. Now, a year later, things are finally settling in and I’m hoping to bring this blog thing back to life, if only because the act of writing truly grounds me. One of the better parts of my new position has been getting to know our Qatar-based medical school faculty and staff, who sent me the most amazing Persian cookbook – Saraban: A Chef’s Journey through Persia by Greg and Lucy Malouf. (Thank you Shahrad and team!) This is a cookbook tha...

Bacon Wrapped Chicken Breasts Stuffed with Spinach, Mushrooms and Roasted Red Peppers
Here is a way to have a chicken dish that is nutritionally complete, including plenty of veggies. You might therefore find that just 1 of these stuffed chicken breasts is sufficient as a meal by itself. You can, of course, always add a side dish or salad to suit bigger appetites. This recipe is from Wheat Belly 10-Day Grain Detox, on sale November 10th. Take advantage of our preorder specials! 4 boneless, skinless chicken breasts (approximately 2 pounds) 1 tablespoon extra-virgin olive oil 2 gloves garlic, minced 1 medium onion, chopped 4 ounces portabello mushrooms, sliced 1/2 cup roasted red peppers 4 cups fresh sp...

Spanish-style Lentil Soup
As part of the effort to give you more ways to include more galacto-oligosaccharide (GOS) fibers to cultivate bowel health, here is a recipe for lentil soup. This variation has a zingy Spanish flavor from poblano peppers and chorizo sausage. Despite the carbohydrate content of the lentils, the net carbs per serving of this soup remains below 10 grams, perfectly safe for the Wheat Belly lifestyle. The yield may actually be a bit better than 8 servings, as I found this soup exceptionally filling. Makes 8 servings 1/4 cup extra-virgin olive oil 1 medium yellow onion, chopped 2 cloves garlic, minced 2 poblano peppers, seeded a...

Haitian Griot Served with Cuban Black Beans & Rice and Marinated Cucumber Salad
If I haven’t blogged much in the way of new recipes lately, it’s because not much of what we’ve been trying lately has been blog worthy. Oh, of course, it’s been edible. Maybe even tasty. But not worth sharing with the world. But this dinner? It’s worth shouting about. In fact, I’ll go on record and say it’s one of the best meals we’ve ever made.  And worth every minute of preparation, which is not a lot of time at the stove, but does include an overnight marinade and a couple of hours braising. So save it for a weekend dinner when you can give it the time it deserves to sa...

Stuffed Eggplant with Lamb & Pinenuts from Ottolenghi’s Jerusalem
I know the year’s barely begun,  but this dish from Yotam Ottolenghi’s Jerusalem is well on its way to being my most memorable meal of 2015. Maybe even the past decade. And this from a gal who says she doesn’t like eggplant. If you don’t own Jerusalem, you must. Every recipe in it is a gem. The day after I was given it from my dear friends Karen and Steven, (OMG thank you!), my book club was over for dinner.  They all gathered round and placed stickies on their favorite recipe in the book that I simply must make. The entire book is one giant sticky collection, but somehow this recipe escaped t...

Putting Up Irene & Rita’s Fresh Summer Tomato Sauce
Ever since I first saw Mrs Frake putting up pickles and mincemeat in the movie State Fair, I’ve wanted to put up something. As opposed to putting up with something, which basically describes my life. I did once put up a few small jars of blackberry jam with the kids while vacationing on Block Island. We tried to sell the jam at the playground – I think someone bought one jar – then used the rest of the jars pretty much immediately. And that was the end of my putting up. Until this week, when I was faced with forty pounds of South Jersey Roma tomatoes (Thanks Patty!) a few days after meeting blogger Mari...

Appetizers for Summer Book Club
As much as I love book club, I love hosting it even more. Because hosting means I get to leave work early and do my favorite thing in the whole world – spend the late afternoon in my kitchen. I’m rarely at home at that time of day, when something wonderful happens to the light in our apartment as the sun begins to peek out from behind the tall apartment towers just south of us, and pours into my kitchen.  Add in NPR or a good book on tape and I’m in heaven. The evening promised good weather, so we planned to meet on the roof.  I took my cue for the menu from the book we were discussing – “...

My current supplement regimen
Back in March (!), after receiving many reader queries about my current supplement regimen, I began writing a “supplement” post…But then, between one thing and another, I never finished it. Since then, though, I’ve received even MORE requests from even MORE readers on the same topic. So today I picked up my draft and finished it. Here goes, for what it’s worth… Oh wait, first, I would like to note that I take only the C3 Complex curcumin, that is, the curcumin that has been used in all the MM, SMM and MGUS trials. I disregard and am suspicious of any and all brands that claim to have...

Food Sensitivity and Intolerance Testing Changed Their Lives
Susan was tired; tired of feeling foggy, bloated and unable to lose weight.  Her thyroid levels were out of whack and she felt awful.  Having just recently passed her 50th birthday, she assumed that this was what it meant to be a woman of a “certain age”:  A little heavier and slower than she would have liked, not quite as sharp, and generally, just feeling old. It wasn’t until she watched other people coming into a lab that she co-owns and heard them talk about food intolerances did she consider that food might be causing her problems, not her age.  Changes to their diets, made after food intolerance testing, se...

Easy Weeknight Marinades Done Right
I recently partnered up with the brand folks at Mazola Corn Oil to create this fun recipe for marinated grilled Tilapia with kiwifruit served over coleslaw. Mazola Corn Oil has more cholesterol-blocking plant sterols than other cooking oils, and can play an important role in lowering your cholesterol. It is a great source of healthy polyunsaturated and monounsaturated fatty acids. Its mild flavor and high smoke point also make it a fantastic all-purpose oil great for general cooking, baking, grilling, sautéing and stir-frying, and can be used as a butter substitute in certain recipes. It’s also the perfect oil to use ...
