The grazing ruminants of the earth are able to obtain virtually all their nutrition from consuming grasses and forage. They harbor specific anatomic and physiologic adaptations developed over millions of years to do so. Humans have no such adaptations but are advised by all “official” sources of dietary advice to make grains–the seeds of grasses–the cornerstone of the diet. It means that there are numerous indigestible or only partially digestible proteins in wheat and grains that explain why autoimmune diseases, gastrointestinal disruption, and other health conditions are so commonly caused by wheat and grain consumption in humans.
