Easy Weeknight Marinades Done Right
I recently partnered up with the brand folks at Mazola Corn Oil to create this fun recipe for marinated grilled Tilapia with kiwifruit served over coleslaw. Mazola Corn Oil has more cholesterol-blocking plant sterols than other cooking oils, and can play an important role in lowering your cholesterol. It is a great source of healthy polyunsaturated and monounsaturated fatty acids. Its mild flavor and high smoke point also make it a fantastic all-purpose oil great for general cooking, baking, grilling, sautéing and stir-frying, and can be used as a butter substitute in certain recipes. It’s also the perfect oil to use ...

Enjoy the Taste of Eating Right with Flavorful Foods
It’s National Nutrition Month and all month long we’re sharing fun and delicious ways to “enjoy the taste of eating right.” To me, it’s all about making practical food choices, and about blending taste and nutrition. When we’re trying to eat right, we want to focus on FLAVOR, because who wants to eat something that doesn’t taste good, right? I was on Let’s Talk Live this week sharing some of my favorite tips for snacks and breakfasts that are full of flavor and packed with nutrition. Hopefully it can help make eating right a little easier (and a little tastier!) for you and your family. ...

Crispy chicken and noodles in green curry
We recently spent a weekend in Berlin and stumbled across a great Thai fusion restaurant called Transit. It's apparently a chain in Germany, but chain or no, we loved it. It can be hard for me to find restaurants to meet my dietary needs at times, but anything Thai usually fits the bill, what with the ample coconut milk, so I knew I was in a good place. This place was small dish style, so we ordered about 6 between us and one of them was a fried chicken in green curry. Anything that involves fried chicken skin is high on my list, so I was really looking forward to it. I was not disappointed. It arrived and I might hav...

Meatless Monday Recipe: Pan Fried Chickpea Salad
Another Happy Meatless Monday, where has February gone! Today I wanted to share a delicious, very simple, healthful and savory vegetarian side dish: Pan Fried Chickpea Salad. This one-pot chickpea salad is made with warming spices, vibrant cilantro and lemon, protein packed chickpeas, making it the perfect go-to accompaniment. Not to mention the absolutely divine dressing! It keeps for up to a week when left undressed, so consider doubling  it to have at your convenience. I love serving a double portion as a main meal topped with thick slices of creamy ripe avocado or toasted walnuts for an added crunch. Photo from: 101c...

Receiving the wild heart of medicine : Earth
This is the third in a series of posts engaging with the five elemental phases in a visceral, symbolic way. You can find the post on the wood phase element by clicking here, and the post on the fire element by clicking here. With each of these posts, I catch myself wanting to start by saying how special the current element is, how different from the others! It’s true, each one is incredibly distinct, a separate universe. What does water know of fire, or fire of water? Yes, each is special–just as special as everybody else. Each a perfect child in the eyes of all-embracing mother earth. Earth is simple–so glor...

“Good for Your Heart” Chili Recipe
What’s more comforting than a simmering pot of chili? One of the things I love about chili is that you can please everyone in the family. I also love that you can get lots of nutritious foods into a pot without being in the kitchen all day. My chili recipe reduces the amount of meat using a 50/50 mix of blended mushrooms and several other fiber rich vegetables and beans.  This healthier twist reduces the cholesterol and sodium and increases the fiber and nutrients, which help to make the recipe heart healthier (especially if you compare to a traditional recipe). My recipe has all the taste and flavor you have come t...

Let it go: Food Blog Comment Rage
I love reading food blogs. I rarely cook the recipes; I just like to ogle the beautifully-lit photos, fancy serving dishes and lush descriptions. I admire their patience in measuring each ingredient into a tiny spoon or Pyrex bowl, photographing them from above, then doing the washing up afterwards. But it used to get a little messy when I scrolled down to the comments. There was no need to read the comments. I had better things to do than read the comments. Yet I could not resist. Specifically, my eyes sought out the most inane, passive-aggressive or just plain annoying ones… –  I HATE CILANTRO so I will not be m...
