Building Unity Farm - Winter Fermentations
It's the dead of winter in New England, with new snow on the ground and temperatures near zero.    The animals are clustered together in their barn spaces and heated buckets are keeping their water liquid. There are many indoor tasks to do on the farm during winter - sharpening chain saw chains and other tools, reorganizing the workbench, ordering seeds, planning for Spring planting (we've been tractor shopping), and nurturing all the fermentations begun in the Fall. Our fermentations include 3 kinds of cider, mead, cyser (a mixture of cider and honey), vinegar, sourdough, sauerkraut, and fermented pickles.   H...

Paleo breakfast bowl! Tex mex grits topped with egg, bacon and avocado!
I bet the word 'grits' in the title got a few of you fired up, but don't worry, it's not real grits! It's cauliflower rice that got too much love from the Vitamix and turned into tiny grains more like cornmeal than rice. The good thing about cauliflower is that it tends to absorb the flavors of what you're cooking it in. In this case it's TexMex richness in the form of ancho chili powder and cumin. I love a good burrito bowl and despite my skepticism, this one delivered in a big way. The fine cauliflower had a mouth feel like grits, making it easier to suspend reality for a bit. And the flavor? Out of this world! If you li...

The new Wheat Belly 30-Minute (or Less!) Cookbook now available!
The newest cookbook to help people navigate the healthy Wheat Belly wheat-free lifestyle is now available! I wrote this cookbook with time and ease in mind. But I also applied many of the lessons learned over the last 2 1/2 years since the original Wheat Belly was released. For instance, I learned that many people, increasingly wary of salad dressings, mayonnaise, and sauces, for instance, were interested in making their own. So you will find recipes for healthy Creamy Moroccan Dressing, Tomato Cilantro Dressing, Barbecue Sauce, Thai Red Curry Sauce, and Creamy Pesto Dressing. I also tried to cover a range of ethnic choi...

Meatless Monday Recipe: Poblano and Portobello Fajitas
Another happy Meatless Monday! Today I wanted to share a fresh, savory and interactive meal the entire family will love: Poblano Pepper and Portobello Mushroom Fajitas. These simple and vibrant fajitas will be on the table in minutes and provide your family with a nutritious, customizable, and fun evening together without spending too much time in the kitchen prepping or cleaning afterwards. These fajitas can be made spicy (by including the jalapeño and poblano peppers) or mild by leaving them out. Try incorporating sautéed corn and different colored bell peppers as well as experimenting with the various varieties of mus...

Fall for Chili: Easy Chickpea, Bean & Turkey Chili with Veggies
I love when the cooler weather hits and its time for jeans, sweaters, and warm comfort food. Chili has to be the ultimate in comfort foods. I love that you can’t mess it up. Just about any combination of veggies, beans, and lean protein will work. You can season it from sweet with maple syrup and molasses to spicy with jalapeno and poblano peppers to smoky with chipotle in adobo. The one I’m giving you today takes advantage of canned beans, corn, and tomatoes along with fresh carrots, celery and onion. Meat lovers will get their “fix” from some ground lean turkey in the dish, but this would do fine ...

Chopped Salad for Better Nutrition
My Aunt Bridie and Uncle Frank from Galway, Ireland introduced me to the chopped salad this spring. I’ve always loved salad and never thought that a salad could be so delicious and magical, so boy was I surprised when I ate their chopped salad. Here’s the most exciting part: a chopped salad delivers far more nutrition than a regular salad. The reason is by chopping it you make more of the nutrients available for your body to absorb. When we chew salad we do a woeful job of actually tearing it apart enough to glean all the nutritional benefits. The other reason why this chopped salad is more nutritious is becaus...

How to Eat Real Food Without Spending Hours in the Kitchen
Editor’s Note: This is a guest post from Jules Clancy of Stonesoup. Are you eating real, whole food as much as you’d like? If you’ve been following Zen Habits for any length of time, you’ve probably been inspired by Leo’s story. My favorite part is how he went from being an overweight junk food eater to a lean, plant-food-loving machine. Like Leo, I’m a big believer that for optimum health it’s best to eat real, whole food as much as possible. Preferably prepared at home. The good news is, it doesn’t need to take as much time as you’d think. When I was writing my b...

Cozy Up to this Healthy Vegetable Chili Recipe
I originally found this recipe in Food and Wine magazine. I tried it out with my friend and marathon running buddy Rolando. He’s the kind of guy who buys stuff from the store and “pretends” he made it. I really don’t care because he is an amazing host and friend — and he always provides enough wine! I can also say as a new mom, dinner is harder than ever to get on the table (y’all with me). This is an easy recipe that lasts and freezes well. It’s also versatile. You can change the toppings, wrap it in a tortilla with some spinach, or even add a little to a couple eggs for a savory ...

Are Plastic Products Safe? Educational Webinar Reviews The Science
Concerns about plastic safety have been growing over the years, and the media has stepped up its efforts to expose potential dangers associated with plastic compounds such as bisphenol A (BPA) and phthalates. The problem is – there is very little scientific evidence linking plastic to human harm, and no credible evidence that our current typical exposures to BPA poses any health risks at all (so say the health agencies of the United States, Canada, the European Union, and Japan). But that’s not a very exciting story, is it? Instead, what we often hear in the news is that microwaving our plastic containers or dr...

Looking for Beauty in a Life of Chronic Pain
Winter seems to be the time of year we’re all worn from the mere act of survival. We feel like worn out human popsicles as we’ve rediscovered the very acts of staying warm and moving around seem too much to expect. Maybe those bears that hibernate have the right idea. It would be sweet to go to sleep and wake up when it’s spring but alas, it’s not to be for us mere humans. We are imbibed with the tasks of survival, family responsibilities and dragging ourselves along for the ride. I think most of us feel we used to be more appreciative of winter, you know BEFORE. That would be before pain arrived in our lives. We r...

A “Nutrition Prescription” For Fighting Cold and Flu
Medicine isn’t the only way to fight off cold and flu. Food can be your medicine too. I was on Let’s Talk Live recently sharing a nutrition prescription to help you stay healthy. Below are some highlights from the segment. There are basically two big tricks to beating winter “bugs”: reducing inflammation and boosting immunity.  So whether you’re trying to prevent sickness or recover ASAP, all the foods I mention below will help you. Spicy Lamb Korma I created this recipe for www.leanonlamb.com – it’s a spicy lamb korma that you make in the slow cooker. Lamb is nutrient rich, and packed ...

Blood Pressure Debate Heats Up
A recent study has just announced that it is acceptable to have blood pressure that is 140/80, which was considered dangerous before.  The conclusion was made because there were no more deaths in this group of patients compared with patients who had 120/80 or less blood pressure.  Patients were followed for two decades.  Basically the conclusion implies that because you didn't die, it must be OK. But what about other conditions like dementia, nonfatal strokes, nonfatal heart attacks, etc?  These issues the study did not take into consideration.  Does it mean that if you are not dead, the rest does not matter? Causes o...
