Safety and Efficacy Not Guaranteed: Separating Fact from Fiction Regarding Extensively Heated Egg and Milk Products

The recently published review on ‘Baked egg and milk diets revisited’ (1) provides an overview of current evidence, reporting a comprehensive (though not systematically searched) review of the key research studies, and outlining the complexities of introducing baked milk and baked egg into the diet of young children with these food allergies. The authors highlight multiple theorized benefits of incorporating both baked milk and baked egg into the diet (in a variety of choices and forms). This area of practice is of intense interest given studies that have concluded baked incorporation accelerates the natural history of re solution of the milk or egg allergy.
