Plant polyphenols biofortified food as a tool for ameliorating hepatic, lipid and bone homeostasis in older adults

Rationale: Lettuce is a source of fibers, which promote satiety, vitamin C, flavonoids and phenolic acids. By the application of positive stress (eustress) such as moderate saline stress, it is possible to increase the biosynthesis and accumulation of phenolic compounds of lettuce. Data on the effects on human health of the consumption of this type of polyphenols enriched (PE) lettuce are missing. The aim of the study is to verify if supplementation for twelve days with PE lettuce ameliorates homeostasis in a population of senior people.
