When Nutrition Trends and Food Allergies Collide

Local food customs, once relatively static, are increasingly influenced by consumer demand for new products, changing tastes, and evolving health trends in a global food market. Moreover, with growing consumer concern for the environment, animal welfare, and the quest for sustainable food sources, novel ingredients are emerging and with these, potential allergies to these foods. Food allergen labeling laws reduce the risk of inadvertent exposure to known allergens. However, labeling laws vary by country or region and only priority allergens, those responsible for the vast majority of allergic reactions, require full disclosure on manufactured food product labels.
