Ultrasound improves the low-sodium salt curing of sea bass: Insights into the effects of ultrasound on texture, microstructure, and flavor characteristics
Ultrason Sonochem. 2023 Sep 11;100:106597. doi: 10.1016/j.ultsonch.2023.106597. Online ahead of print.ABSTRACTThe purpose of this study was to evaluate the effects of ultrasonic pretreatment on the quality of cured sea bass. Compared to static marination, ultrasonication significantly increased the rate of NaCl transfer, reduced the hardness and chewiness of fish, and improved water retention. Microstructural observations revealed that the sea bass muscle fibers were severely fragmented, with their borders becoming increasingly blurred with increasing ultrasonic intensity. In addition, ultrasound-assisted marination signif...

Systematic study of the synergistic and kinetics effects on the removal of contaminants of emerging concern from water by ultrasound in the presence of diverse oxidants
Environ Sci Pollut Res Int. 2023 Aug 26. doi: 10.1007/s11356-023-29189-y. Online ahead of print.ABSTRACTThe enhancement of the ultrasound system by adding diverse oxidants to remove a model contaminant (acetaminophen, ACE) in water was investigated. Different parameters were evaluated to study their effect on both the degradation kinetics and the synergy of the combination. The variables studied were the ultrasonic frequency (575, 858, and 1135 kHz), type of oxidant (hydrogen peroxide, sodium peroxydisulfate (or persulfate, PDS), and potassium peroxymonosulfate (PMS)), ACE concentration (4, 8, and 40 µM), and oxidant conc...

Experimental study on damage mechanism of blood vessel by cavitation bubbles
In this study, cavitation bubbles were generated using the low-voltage discharge method in 0.9% sodium chloride saline, and vessel models with wall thicknesses ranging from 0.7 mm to 2 mm were made using a 3D laminating process. The interaction between cavitation bubbles and vessel models with different wall thicknesses was observed using a combination of high-speed photography. Results show that cavitation bubble morphology and collapse time increased and then stabilized as the vessel wall thickness increased. When the cavitation bubble was located in vessel axial line, pair of opposing micro-jets were formed along the ax...

Pectin from sunflower by-products obtained by ultrasound: Chemical characterization and in vivo evaluation of properties in inflammatory bowel disease
Int J Biol Macromol. 2023 Jun 22:125505. doi: 10.1016/j.ijbiomac.2023.125505. Online ahead of print.ABSTRACTInflammatory bowel disease (IBD) is a public health challenge and the use of pectin for symptom amelioration is a promising option. In this work, sunflower pectin has been extracted without (CHP) and with assistance of ultrasound (USP) using sodium citrate as a food-grade extracting agent. At optimal conditions (64 °C, 23 min) the highest yield was obtained with ultrasound application (15.5 vs. 8.1 %). Both pectins were structurally characterized by 1H NMR, HPSEC-ELSD, FT-IR and GC-FID. Unlike CHP, USP showed a lowe...

The role of surface tension on the growth of bubbles by rectified diffusion
Ultrason Sonochem. 2023 Jun 10;98:106473. doi: 10.1016/j.ultsonch.2023.106473. Online ahead of print.ABSTRACTRectified diffusion has wide and important applications in sonochemistry, ultrasonic cleaning and medical ultrasound. Recent experimental results have demonstrated that the addition of surfactant substantially enhances bubble growth rate. As a hypothesis, this was widely attributed to the acoustic microstreaming and mass transfer resistance caused by surfactants. In this research, the effects of the surfactant of sodium dodecyl sulphate on the rectification have been simulated by considering only the variation of th...
