Lessons learned from two decades of research in nutrition education and obesity prevention: Considerations for alcohol education
Health education was until late in the 20th century almost universally a one-sided communication from experts to the lay public. In the case of both nutrition and alcohol education, it was ineffective. Developing a Multicultural Nutrition Education Tool: Pacific Island Food Models
Native Hawaiians and other Pacific Islanders (NHOPI) are 1 of the highest-risk US populations affected by the cardiometobolic diseases of obesity, diabetes, and heart disease, which can be improved with increased nutrition education and counseling.1 Barriers to health improvements through effective nutrition education include limited English proficiency, differences in social norms related to food, and limited availability of preferred food items. Development and dissemination of innovative tools, such as culturally relevant food models, are needed to address these barriers.

“Let’s Learn About New and Healthy Foods!” Nutrition Education in Childcare: Providers’ Motivators, Facilitators and Barriers
National childhood obesity prevention policies recommend that childcare providers educate children about nutrition by engaging their senses through books, posters and hands-on activities. Such daily learning opportunities expose children to a variety of foods; encouraging them to try new and healthy foods. Yet, regular and structured nutrition education in childcare is rare and limited. This qualitative investigation presents motivators, facilitators and barriers for nutrition education in childcare, from the perspective of Head Start, Child and Adult Care Food Program (CACFP) funded and non-CACFP providers.
