Building an Inclusive Health Care System Requires Offering Culturally Inclusive Foods in Health Care Environments

The United States is expected to become increasingly diverse, with estimates that individuals of Hispanic origin will represent 29% of the total US population and those of Asian origin will represent 9% of the total population by 2060.1,2 Roughly one quarter of older adults belong to racially or ethnically minoritized communities, and this segment of the population is expected to grow dramatically in the coming decades.3 The availability of family caregivers and other forms of informal support for older adults (eg, meal preparation, medical support) are also expected to decrease, requiring older adults to increasingly use institutional long-term care (LTC) and hospital services.
