Do Medical Schools really care about GCSE scores?

How much do Medical Schools really care about these grades? Currently, I mainly want to apply to UCL, King's, Imperial, St. George's, or Manchester.
However for example the Medentry site for KCL states "GCSEs made up 40% of the weighting in scoring for interview, with an average of roughly 7.5 A*s and 2.5 As achieved by offer holders in 2018." And I have nowhere near seven A*s.
Some med schools care and will score GCSEs for shortlisting, some just have minimum requirements.
