P136 Resource Parent Nutrition Education Training: Formative Evaluation
Prior research has uncovered myriad challenges foster youth face with their dietary health and relationship with food. Caregivers report feeding as a primary stressor in their relationships with foster children. Research outlining strategies for supporting foster parent education is nonexistent. A survey of existing nutrition education interventions used in certification highlighted a lack of trauma-informed alignment and instruction on positive feeding practices. Further, there has been no research exploring the potential of SNAP-Ed to support foster parent education efforts in California.

P091 Assessing Level of Interest in In-person and Virtual Nutrition Education Among SNAP-Ed Eligible Utahns
In response to SARS-CoV-2, Utah's Supplemental Nutrition Assistance Program-Education (SNAP-Ed) pivoted from in-person to virtual nutrition education classes. Virtual nutrition programs have been found to be effective among certain demographics. Additionally, virtual classes may be a preferred mode of SNAP-Ed nutrition education delivery.

How Do We Measure up in Nutrition Education?
We are constantly working to promote the effectiveness of nutrition education for improving dietary quality and physical activity with the goal of positive health outcomes. This is no easy task. If improving knowledge alone about healthy diets was all it took to show how important nutrition education is, I think we can agree that we have done our jobs well. But our work extends beyond knowledge into behavior, which is influenced by so many other factors that add to the challenge of demonstrating the effectiveness of nutrition education.
