The objectives of this study were to investigate the antimicrobial effect of the X-ray and curcumin combination against Listeria monocytogenes on sliced cheese and to determine the effect of this treatment combination on the quality attributes of sliced cheese. Treatment with the combination of X-ray (0.4 kGy) and curcumin (0.5 mg/L) resulted in the reduction of L. monocytogenes cell count by 3.65 log CFU/g. The synergistic cell count reduction of L. monocytogenes in the combination treatment group was 0.92 log units. The underlying antimicrobial mechanisms of X-ray and curcumin combination include enhanced generation ...

This study firstly elucidated the interactive behavior in biofilm development of two foodborne pathogens, and future studies for biofilm control and antibiotic therapy should take into account interactions in mixed-species biofilms.

Most environmental biofilms contain a variety of species. These species can establish cooperative and competitive interactions, possibly resulting in an increase or a decrease in antimicrobial resistance. Therefore, results obtained following inactivation of single-species biofilms by means of different technologies (e.g., Cold Atmospheric Plasma, CAP) should be validated for multi-species biofilms. First, a strongly adherent and mature Listeria monocytogenes and S. Typhimurium dual-species biofilm was developed by altering different incubation conditions, i.e., growth medium, incubation temperature, inoculum ratio of L. m...

This study evaluated efficacies of four commonly used chemical sanitizers at practical concentrations against L. monocytogenes biofilms on major food-contact surfaces including stainless steel, low-density polyethylene (LDPE), polyvinyl chloride (PVC), polyester (PET), and rubber. In general, efficacies against L. monocytogenes biofilms were enhanced by increasing concentrations of quaternary ammonium compound (QAC), chlorine, and chlorine dioxide, or extending treating time from 1 to 5 min. The 5-min treatments of 400 ppm QAC, 5.0 ppm chlorine dioxide, and 200 ppm chlorine reduced 3.0–3.7, 2.4–2.7, and 2.6&nda...

The major global concern about the emergence of bacterial strains resistant to widely used therapeutic agents for human infections has increased research for the discovery of new antimicrobial compounds as therapeutic alternatives. The aim of...

While much research has been done on elements of food safety climate and culture, no data are available on their relationship with Listeria monocytogenes contamination at retail. We implemented a forty-four-question survey on sense of commitment, employee training, and personal hygiene in 50 United States grocery retail deli departments across six states to evaluate the lin...

(BfR Federal Institute for Risk Assessment) To make food even safer for humans, experts from scientific institutions, food regulatory authorities and the business community will discuss current developments and strategies at the 'Zoonoses and Food Safety' Symposium at the German Federal Institute for Risk Assessment (BfR) on 4 and 5 November 2019, in Berlin-Marienfelde. Because some micro-organisms in food can cause health problems. Campylobacter in raw milk, salmonella in eggs or listeria in ready-to-eat foods often lead to outbreaks affecting numerous patients.
