Superfood of the Week: Mushrooms

Though mushrooms aren't exactly bursting with the bright colors of their fruit and veggie counterparts, these fungi still hold their own in the nutrition department. (Example: A a medium-sized portabella mushroom has as much potassium as one banana.) Not only are mushrooms super-low in calories (only 22 in a cup!), but because of their meaty texture and flavor, they're also a fabulous savory substitute for everything from burgers to tacos that helps you cut serious cals, too.
