Carboxymethylation modification, characterization of dandelion root polysaccharide and its effects on gel properties and microstructure of whey protein isolate
Int J Biol Macromol. 2023 May 10:124781. doi: 10.1016/j.ijbiomac.2023.124781. Online ahead of print.ABSTRACTIn the present study, a native polysaccharide (DP) with sugar content of 87.54 ± 2.01 % was isolated from dandelion roots. DP was chemically modified to obtain a carboxymethylated polysaccharide (CMDP) with DS of 0.42 ± 0.07. DP and CMDP were composed of the same six monosaccharides including mannose, rhamnose, galacturonic acid, glucose, galactose, and arabinose. The molecular weights of DP and CMDP were 108,200 and 69,800 Da, respectively. CMDP exhibited more stable thermal performance and better gelling properti...

Molecules, Vol. 28, Pages 3573: Assessment of Various Food Proteins as Structural Materials for Delivery of Hydrophobic Polyphenols Using a Novel Co-Precipitation Method
In this study, sodium caseinate (NaCas), soy protein isolate (SPI), and whey protein isolate (WPI) were used as structural materials for the delivery of rutin, naringenin, curcumin, hesperidin, and catechin. For each polyphenol, the protein solution was brought to alkaline pH, and then the polyphenol and trehalose (as a cryo-protectant) were added. The mixtures were later acidified, and the co-precipitated products were lyophilized. Regardless of the type of protein used, the co-precipitation method exhibited relatively high entrapment efficiency and loading capacity for all five polyphenols. Several structural changes wer...

Molecules, Vol. 28, Pages 3384: A Novel Intelligent Indicator Film: Preparation, Characterization, and Application
u Feng Jiang The development of intelligent indicator film that can detect changes in food quality is a new trend in the food packaging field. The WPNFs-PU-ACN/Gly film was prepared based on whey protein isolate nanofibers (WPNFs). Anthocyanin (ACN) and glycerol (Gly) were used as the color indicator and the plasticizer, respectively, while pullulan (PU) was added to enhance mechanical properties of WPNFs-PU-ACN/Gly edible film. In the study, the addition of ACN improved the hydrophobicity and oxidation resistance of the indicator film; with an increase in pH, the color of the indicator film shifted from dark pin...

Effect of ultrasound treatment on interactions of whey protein isolate with rutin
Ultrason Sonochem. 2023 Apr 3;95:106387. doi: 10.1016/j.ultsonch.2023.106387. Online ahead of print.ABSTRACTRutin is a biologically active polyphenol, but its poor water solubility and low bioavailability limit its application to the food industry. We investigated the effect of ultrasound treatment on the properties of rutin (R) and whey protein isolate (WPI) using spectral and physicochemical analysis. The results revealed that there was covalent interaction between whey protein isolate with rutin, and the binding degree of whey isolate protein with rutin increased with ultrasound treatment. Additionally, solubility and s...

The effect of sweet tea polysaccharide on the physicochemical and structural properties of whey protein isolate gels
In this study, we investigated the effect of sweet tea polysaccharide (STP) on the physicochemical and structural properties of heat-induced whey protein isolate (WPI) gels, and explored the potential mechanism. The results indicated that STP promoted the unfolding and cross-linking of WPI to form a stable three-dimensional network structure, and significantly improved the strength, water-holding capacity and viscoelasticity of WPI gels. However, the addition of STP was limited to 2 %, too much STP would loosen the gel network and affect the gel properties. The results of FTIR and fluorescence spectroscopy suggested that S...

Protein and polysaccharide based encapsulation of ginger oleoresin: impact of wall materials on powder stability, release rate and antimicrobial characteristics
Int J Biol Macromol. 2023 Apr 4:124331. doi: 10.1016/j.ijbiomac.2023.124331. Online ahead of print.ABSTRACTGinger oleoresin is widely used as a flavouring agent in many foods. But its bioactive components are unstable as being sensitive to heat, humidity and light. Hence this study proposes the encapsulation of ginger oleoresin in order to protect it and regulate its release in the gastrointestinal system via spray drying utilising whey protein isolate (WPI) and gum acacia (GA) as wall materials. The feed emulsions used were characterised for emulsion stability, viscosity, droplet size and thermal properties. The GA microc...

Properties of whey protein isolation/konjac glucomannan composite gels: Effects of deacetylation degrees
Int J Biol Macromol. 2023 Mar 22:124138. doi: 10.1016/j.ijbiomac.2023.124138. Online ahead of print.ABSTRACTThe effects of konjac glucomannan (KGM) with different deacetylation degrees (DDs) on the gel properties of whey protein isolate (WPI) were investigated. The appropriately deacetylated KGM (DDs in the range of 0-53.85 %) incorporated within WPI and formed relatively uniform compound gels, while excessive deacetylated KGM (DDs = 63.46 or 71.63 %) caused macroscopic precipitation and aggregation in WPI-KGM system. The water holding capacity of WPI-KGM gels decreased with the gradual increase of DDs, and the removal of ...

Encapsulation of lycopene into electrospun nanofibers from whey protein isolate-Tricholoma lobayense polysaccharide complex stabilized emulsions: Structural characterization, storage stability, in vitro release, and cellular evaluation
In this study, lycopene-loaded nanofibers were successfully fabricated by electrospinning of oil-in-water (O/W) emulsions stabilized by whey protein isolate-polysaccharide TLH-3 (WPI-TLH-3) complexes. The lycopene encapsulated in the emulsion-based nanofibers exhibited enhanced photostability and thermostability, and achieved improved targeted small intestine-specific release. The release of lycopene from the nanofibers followed Fickian diffusion mechanism in simulated gastric fluid (SGF) and first-order model in simulated intestinal fluid (SIF) with the enhanced release rates. The bioaccessibility and cellular uptake effi...
