Response to “Accessible Digital Technology in Nutrition Education and Behavior Change Interventions”
The authors of the June 2023 article, “Digital Technology in Nutrition Education and Behavior Change: Opportunities and Challenges,” thank Dr. Baxter for highlighting individuals with disabilities as an important group to consider in creating accessible digital technology for nutrition education and behavior interventions. We agree and strongly support nutrition education and behavior interventions that enhance digital equity for individuals with disabilities, given the diet-related disparities that disproportionately affect this group (including obesity, heart disease, and diabetes). Culinary Medicine and the Promotion of Plant-Based Diets: Is Caution Needed for Older Adults?
Culinary Medicine (CM), which combines food, cooking, and the science of medicine1 for the management of chronic disease conditions, is an emerging practice area for health professionals, particularly physicians.2 Culinary skills and food-disease-related knowledge are enhanced by CM training3; however, there is much to learn regarding optimal program outcome measures.4 What cannot be gained from a CM program is the comprehensive nutrition knowledge that may be needed to ensure CM prescriptions result in benefits and minimize harm. Beyond Our Silos
While we are joined as co-authors of this piece, the two of us met each other in a different context: as journal associate editor and prospective author. Both of us are committed to interdisciplinary work (Pamela is a nutritionist and qualitative researcher within an interdisciplinary health science department, while Alyshia is an anthropologist with a primary appointment in an ethnic studies department who largely collaborates with colleagues in public health), and yet we found our initial interactions were challenging as we negotiated different perspectives.
