Household Size, Food Insecurity and Fruit and Vegetable Intake of Keiki Produce Prescription (Kprx) Program Participants
Fruit and vegetable (FV) intake is low among individuals residing in homes that experience food insecurity (FI). Native Hawaiian and other Pacific Islander (NHOPI) populations experience increased risk for FI and low FV intake. Household size may impact the resources available to address FI and FV. Mixed Methods Investigation of Diet Quality and Nutrition-Related Behavior During Pregnancy
Suboptimal diet quality during pregnancy places mothers and babies at risk for adverse short- and long-term health outcomes. Improving prenatal dietary intake can support maternal health and place babies on a developmental trajectory that mitigates disease risk. Pregnancy is also described as a “teachable moment” whereby individuals have increased interest in making healthy choices for their baby. Perception of NUEVA (Nutrition for Underserved Elders via Application) Usability During Alpha-Testing
Older adults (60 years+) have unique nutrition needs and circumstances. To address their individual requirements, many technological innovations are emerging to provide the necessary resources for this largely underserved population. To enhance participation in the senior nutrition programs, a multifunctional app, NUEVA, was created to optimize recruitment, assessment, nutrition intervention, and the participant experience. “Autism Eats:” Preliminary Analyses of a Nutrition Education Intervention for Toddlers With Autism Spectrum Disorder
Children with autism spectrum disorder (ASD) experience up to 5 times more feeding problems, including problematic mealtime behaviors and food selectivity (ie, a narrow variety of foods), compared to their neurotypical peers, which may increase the risk for developing poor eating behaviors. A pilot randomized controlled trial (RCT) is being conducted to determine whether a nutrition education intervention for toddlers with ASD is efficacious to improve mealtime and eating behaviors compared to the enhanced usual care (EUC) group. A University-Low-Income-Housing Partnership to Support Food Security, Healthy Shopping, Eating and Health Among Seniors
Low-income seniors were especially vulnerable to negative impacts resulting from pandemic social distancing when meals, often the only opportunity for daily socialization, were discontinued.
