Gluten-free living in China: The characteristics, food choices and difficulties in following a gluten-free diet - An online survey.
CONCLUSION: Our findings offer a basic characteristics pattern of the population on a GFD in mainland China. Nearly one-third of GFD followers found the diet challenging to be followed. We suggest that sufficient celiac disease and gluten-induced disorder education be conducted among healthcare practitioners. Early diagnosis of gluten-induced disorders and defining an Asian-adapted GFD, as well as an increase in public awareness, may help adherence to a strict GFD in China. Celiac Disease and Increased Risk of Pneumococcal Infection: Methodological Issues
We were interested to read the paper by Simons et  al that was published in The American Journal of Medicine.1 The authors purposed to examine the risk of pneumococcal infections in celiac disease. They concluded that there is positive association between celiac disease and risk of pneumococcal infection. Optimization of a gluten free formulation of the Turkish dessert revani using different types of flours, protein sources and transglutaminase
In this study, gluten-free revani was made using corn flour, rice flour, potato flour, corn starch and tapioca starch and the recipes were developed with soy protein, pea protein and transglutaminase (TG) enzyme. A combination of TG and protein sources was found more effective in enhancing the hardness of revani based on rice flour compared to soy protein only.
