One Screw Here and Another There…
It takes four screws and standoffs to keep my heat-sink securely on my processor. Well, I used just the two screws and standoffs I had and now my computer is up and running.  Halleluiah! It was a gamble, but it worked.  My processors temperatures are running cool around 35 degrees Celsius. I couldn't wait for that part to arrive anymore.  Oh, how nice it is to be off that iPad! I will add the other two screws and standoffs when they arrive Monday. Run With the Winners, and Not the Losers… It mystifies me when someone goes  and asks “The Homeless Guy” how to get off the streets and he can’t even...

Slow-Cooker General Tso’s Chicken
Chinese food has always been one of my favorites! While takeout is easy, it’s not always healthy. Recently, I’ve been on the hunt to create a healthy alternative to a family favorite general tso’s chicken dish. This image was reprinted with permission from http://mealmakeovermoms.com/ and http://healthyaperture.com I wanted to find a way to pack in all of the flavor of this meal, while reducing the excessive amount of fat sodium that oftentimes comes in the fried takeout version. I was also looking for a way to increase the vegetables and make the recipe just as easy as ordering takeout. Slow Cooker Me...

Juicing: Is It for You?
By Amy Campbell Ask people who have diabetes if they drink juice, and chances are they'll tell you that they don't. They may say that juice is "too high in sugar" or "too high in carbohydrate." They may tell you that drinking juice uses up all of their carb choices, or that juice sends their blood glucose sky-high. Ask the same question of a dietitian, and he may tell you that he usually doesn't recommend that people with diabetes drink juice for similar reasons. But "juicing" is a whole different ballgame for some people. A couple of weeks ago, I wrote about intermittent fasting as one of the latest trends. Juicing has al...

No fake foods for Truemarrow
John has become a vocal advocate for the wheat- and grain-free lifestyle, having experienced reversals of obesity, hypertension, insomnia, anxiety, depression, and joint pains. Here’s his terrific story: I started my journey I was 252 pounds, my blood pressure was 180/120, and I could not do my favorite physical activity, tennis, for more than 10 minutes without being out of breath. I was also having extreme trouble sleeping, I was anxious and depressed, and I had arthritic symptoms in my knees. Not sure about blood sugar, but I am sure I was prediabetic. I was also a 38 waist pushing 40 and my body fat percentage w...

Helen’s Friday Meal
Today we had pork tenderloin (YUM!), candied sweet potatoes (YUMMIER!), butterbeans boiled with okra, cauliflower with a lemon butter sauce and cornbread.  Helen couldn't get me to the door as I was sound asleep. She finally called dad as she had forgotten my phone number and dad called me waking me up. I hurried to the curb to get my meal. (Source: The 4th Avenue Blues)

Just Let Me Lie In My Own Bed
I was sitting on mom’s comfortable nursing home bed last night when my father joined us by walking through the door in boisterous fashion. “I thought that was your car out there,” my father said as he took a seat and turned on the television tuning it to the local weather channel. He had just missed the part where I had to help my mother change her pull-up again. She moves so slow with her walker that she sometimes can’t get to the bathroom in time. I bagged up her soiled pajamas to take home to wash. “Johnny! I want out of here!” she told my father tersely raising up in the bed. “You have one more week then...

The Healthful Vegan Diet
‘Let your food be your medicine, and your medicine be your food.’ ~Hippocrates By Leo Babauta Eat plants. Those two words are the best things I’ve learned about diet, and if you stick to that, you’re likely be pretty healthy. That said, eating a vegan diet (no animal products) doesn’t necessarily equate to a healthy diet, despite what many believe. Yes, vegans on average are healthier and leaner than the average person. But that’s an average — there are unhealthy vegans. How is that possible? You can eat lots of sweets, fried foods, processed foods, foods with white flour (br...

when your patient says thanks….
The other morning I was approached by a patient in the hospital foyer. She just wanted to say thanks for the care I had given her. Then out of left field she said, “and I love following your blog and Facebook page….but I must say I’m a bit disappointed you didn’t write anything about me. …..wasn’t I interesting enough?” Strangely enough, I have had this happen 3 times over the last month. Patients who recognised me from this blog or my Facebook page, which I do not deny feels sorta nice & elicits mucho self ego-stroking (which is not so nice, just ask my partner)….but it also underlines the care I must ...

“Potato” salad
Just in time for backyard barbecues and picnics! Here’s my version of a delicious faux potato salad using the ever versatile cauliflower as potato replacement. The key to the unique taste of this version are from the rice vinegar, cucumbers, and eggs. Be sure to slice the cucumbers very thinly or use a mandolin set to a thin slice. While not included here, some cooked crumbled bacon would go perfectly! Use a healthy mayonnaise. If you cannot find one, I will be posting a recipe for homemade mayonnaise in an upcoming post. 1 large head cauliflower, chopped into ¾-inch pieces 4 hardboiled eggs, halved and sliced 2 cele...

How to Eat Real Food Without Spending Hours in the Kitchen
Editor’s Note: This is a guest post from Jules Clancy of Stonesoup. Are you eating real, whole food as much as you’d like? If you’ve been following Zen Habits for any length of time, you’ve probably been inspired by Leo’s story. My favorite part is how he went from being an overweight junk food eater to a lean, plant-food-loving machine. Like Leo, I’m a big believer that for optimum health it’s best to eat real, whole food as much as possible. Preferably prepared at home. The good news is, it doesn’t need to take as much time as you’d think. When I was writing my b...
