ConclusionBoth raw and cooked foxtail millet protein isolates can exert hypoglycemic effects in diabetic mice through rewiring glucose homeostasis, mitigating diabetes ‐induced gut dysbiosis, and affecting the GLP‐1R/PI3K/AKT pathway.
