Make Celeb Chef Ingrid Hoffmann's Roasted Tomato Sopa When Temps Drop

Nothing beats a hot bowl of soup on a cold day -- and we're big fans of tomato soup, which packs a hefty dose of lycopene, a promising antioxidant. However, many tomato soup recipes use loads of butter and cream to give them a creamy texture (which we will say goes great with a grilled cheese sandwich). However, in this recipe from celeb chef Ingrid Hoffmann's latest book, Latin D'Lite: Delicious Latin Recipes with a Healthy Twist, she takes the classic soup to a tastier, healthier next level by using roasted tomatoes, onions and cumin for flavor; Hoffman mimics a creamy texture by garnishing it with protein-rich nonfat plain Greek yogurt.
