Analysis of chicken breast meat freshness with an electrochemical approach

Graphene sheets were introduced during meat sample preparation to enhance the electrochemical signal. The electrochemical activity profile of the meat extract shows a consistent fingerprint change during the meat decomposition process and can be used for evaluating meat freshness. We also converted the electrochemical profiles into a series of patterns for recognizable evaluation. The results suggest that the proposed electrochemical sensor could evaluate the freshness of chicken breast meat across brands. The proposed new analytical approach meets the goals of fast detection and simple operation and is capable of on-site testing.
