This study demonstrated a maximum 2.91 log reduction of Salmonella cocktail in wheat flour treated with 395 nm pulsed LED for 60 min in a semi-closed system. Oxidation occurred in wheat flour after 30 and 60 min exposure to the 395 nm LED, which subsequently led to bleaching, and polymerization of gluten components through disulphide linkage. The water holding capacity of gluten was reduced by oxidation, and the contents of secondary structures were altered significantly after pulsed LED treatment, but the rheological properties were not deteriorated. The disulfide bond formation naturally happens during dough formation an...

Yesterday, I revealed that the Tennessee Department of Healthreported its first death from vaping-associated respiratory illness as follows: "The Tennessee Department of Health has reported one death in a patient with serious respiratory disease associated with use of electronic cigarettes or other vaping devices. This is the first such death reported in Tennessee. "As it turns out, it appears that this death was not caused by electronic cigarettes, but byTHC vape carts.I suggested that the health department's reporting of the death as being associated with the use of " electronic cigarettes or other vaping ...

Conclusion: Specific standards should be kept to prevent outbreaks during athletic events. This was the first time that a foodborne outbreak due to Clostridium perfringens was investigated in the country. Laboratory investigation for toxins should be enhanced, especially in foodborne outbreaks where clinical manifestations of cases are found to be compatible with infection caused by a toxin.

Last Thursday, CDC finally revised itswarning to the public about the vaping-associated respiratory disease outbreak to state clearly that vaping THC-containing products is playing a major role in the outbreak. It stated that:" The latest national and state findings suggest products containing THC, particularly those obtained off the street or from other informal sources (e.g. friends, family members, illicit dealers), are linked to most of the cases and play a major role in the outbreak. Therefore, CDC recommends that you should not use e-cigarette, or vaping, products that contain THC."In addition, CDC finallyr...

In this study, the antibacterial mechanism of Lactobacillus reuteri S5 (L. reuteri S5) against Salmonella enteritidis ATCC13076 (S. enteritidis ATCC13076) was studied by different methods. We found that L. reuteri S5 was able to form a stable biofilm formation, colonizing the entire intestinal tract of chickens. In addition, bacterial cultures and the cell-free supernatant (CFS) of L. reuteri S5 inhibited SE ATCC13076 growth, and this growth inhibition was also observed in the co-culture assay. This effect may be predominantly caused by antimicrobial metabolites produced by L. reuteri S5. Furthermore, treatment with the CF...

Publication date: March 2020Source: Food Control, Volume 109Author(s): Runze Huang, Haiqiang ChenAbstractFresh produce has been identified as the transmission vehicle for many foodborne illness outbreaks every year. They could be contaminated by pathogens at any point within the farm-to-fork food chain. Washing is often used to remove dirt and pathogens on fresh produce. Moreover, an effective decontamination method is required for wash water to prevent cross-contamination. Our group developed a water-assisted ultraviolet (UV) decontamination system (WUV) which combined washing and UV treatments. We evaluated the influence...
