True ileal digestibility of legumes determined by dual-isotope tracer method in Indian adults

ConclusionsThe true mean ileal IAA digestibility of legumes in healthy Indian adults was lower than expected. Traditional processing techniques such as dehulling improve protein digestibility by about 8%.
