The aim of this study was to identify whether microbial thermo-tolerance in red pepper powder was affected by water activity, treatment temperature and particle size of samples. Effects of three bacterial strains and particle size on the heat resistance were analyzed based on the orthogonal experiment method. Samples with part...

This study aimed to (1) determine the thermal resistance (D and z values) of Salmonella and Enterococcus faecium NRRL B-2354 as a promising surrogate for thermal validation studies using paprika, white pepper, and cumin powders, and (2) determine the efficacy of RF on the inactivation of both microorganisms in packaged samples. Samples of paprika, white pepper, and cumin powders with initial water activity levels () of 0.45 ± 0.05 were inoculated with Salmonella cocktail (S. Typhimurium, S. Agona, S. Montevideo, and S. Tennessee) and E. faecium NRRL B-2354 at approximately 8.5 log CFU/g. Inoculated samples were load...

FuchsAbstractFollowing ingestion, gastrointestinal pathogens compete against the gastrointestinal microbiota and overcome host immune defenses in order to cause infections. Besides employing direct killing mechanisms, the commensal microbiota occupies metabolic niches to outcompete invading pathogens. Salmonella enterica serovar Typhimurium (S. Typhimurium) uses several strategies to successfully colonize the gut and establish infection, of which ...

Little is known about enteropathogen seroepidemiology among children in low-resource settings. We measured serological IgG responses to eight enteropathogens (Giardia intestinalis, Cryptosporidium parvum, Entamoeba histolytica, Salmonella enterica, enterotoxigenicEscherichia coli,Vibrio cholerae, Campylobacter jejuni, norovirus) in cohorts from Haiti, Kenya, and Tanzania. We studied antibody dynamics and force of infection across pathogens and cohorts. Enteropathogens shared common seroepidemiologic features that enabled between-pathogen comparisons of transmission. Overall, exposure was intense: for most pathogens the win...

Schlossmacher, Subash SadAbstractReceptor interacting protein kinase 3 (Ripk3) is a signal relay protein involved in initiation of programmed cell death (necroptosis) and modulation of inflammasome activation. While caspase 1 and 11 are pro-inflammatory caspases responsible for unleashing inflammation and cell death by enzymatic activation of the executioners of inflammation and cell death (pyroptosis). Upon Salmonella infection, the host mounts a pro-inflammatory respon...

In conclusion, our data show how oncogenic and tumor-suppressive drivers of cellular senescence act to regulate surveillance processes that can be circumvented to enable SnCs to elude immune recognition but can be reversed by cell surface-targeted interventions to purge the SnCs that persist in vitro and in patients. Since eliminating SnCs can prevent tumor progression, delay the onset of degenerative diseases, and restore fitness; since NKG2D-Ls are not widely expressed in healthy human tissues and NKG2D-L shedding is an evasion mechanism also employed by tumor cells; and since increasing numbers of B cells express NKG2D ...

Conclusion: We found that raw milk samples were not free of Salmonella spp. and Shigella spp. and need to be tested routinely to avoid public health problems. Rapid and reliable real-time PCR method can be developed and used for this purposes instead of slow bacterial culture processes.
