Nutrition and Disease

Nutrition starts and ends in the gastrointestinal tract. Although “nutrition” itself is only directly responsible for “undernutition” (eg, malnutrition) or overnutrition (eg, obesity), it contributes via metabolism to virtually every bodily function and disease process. There are many things in nutrition that are “so obvious,” yet on closer inspection are not actually true, while at the same time there are things that make little sense, but that’s the way it is. “Nutrition” is the culmination of complex interactions between the host, oral nutrient and fluid intake, the genome, and the intestinal microbiome.
