High-Fiber Snack Bars

Most Americans only consume approximately one half of the Adequate Intake for dietary fiber on a daily basis (14 g/1,000 kcal/day). Persons with chronic kidney disease may consume even less with restrictions on potassium and phosphorus directing intake. However, recommendations for patients with a chronic disease such as cardiovascular disease and diabetes can be as great as 40-50 g of total fiber daily. The health benefits of fiber are many. Fiber, especially soluble, can help to decrease total cholesterol, low-density lipoprotein cholesterol, and triglycerides. Fiber can also provide benefit in terms of weight loss and satiety. For people with diabetes, diets providing 30 to 50 grams of fiber per day produces lower serum glucose levels compared with low-fiber diets. The addition of soluble dietary fibers slows gastric emptying rates, digestion, and the absorption of glucose to benefit immediate postprandial glucose metabolism. Some studies have even suggested that high fiber intakes can decrease insulin needs and improve insulin sensitivity.
